Spinach Cheese Manicotti

This was pretty good and I would make again based mainly on the fact that you don't have to boil the noodles! This was very easy and tasty. I am sure you could make a few at a time and freeze them for some easy weeknight meals during the cold winter months.

Chicken Pot Pie IX

I made this tonight with a few alterations to fit our tastes. I purchased a rotisserie chicken because I was short on time and used all the breast meat, which I cubed per the recipe. I used the 1 cup of carrots, 1 cup frozen green peas, and substituted 1/2 cup frozen corn for the celery since we don't care for it. Since the chicken was already cooked, I diced the carrot and also diced up a sweet potato and roasted them in the oven at 425 for 10 minutes. Meanwhile, I diced a whole yellow onion and sauteed it in cooking spray with Italian seasoning, minced fresh garlic, and minced fresh basil. I then added 2 cups of chicken broth after the onions were tender as well as 3/4 cup milk, and the flour, salt, and pepper per the recipe. I ended up adding cornstarch to thicken the sauce since I added additional liquid. Then I followed the recipe as specified. My husband, who does not particularly go out of his way to eat a chicken pot pie, found this dinner to be delicious and went back for second!

Apple Pecan Cobbler

I didn't really care for the pecans in this which is odd because I usually enjoy the combination of apples and nuts. The cobbler part was also more cakey than I prefer, but thanks for sharing!

Peanut Butter Banana Flax Seed Muffins

These were exceptionally sweet! I loved the peanut butter, but I may omit the dates next time. I did what other posters had said and scaled back the sugar to 1/2 cup as well.

Authentic Enchiladas Verdes

This was pretty good, although my sauce tasted a little bitter. To compensate, we ended up adding some New Mexico green chili. I still felt like it was missing something but it was good. Next time, I would use green chilis instead of the serranos because of the flavor difference.

Ranch Beans

My husband is from the southwest where ranch style beans are as common as baked beans in our new home, the midwest. We can't find the canned variety here, so I thought I would try to make these beans for my husband. They took time, but he loved them! I think next time I may even add some jalapeno slices as that variety was always his favorite!

Donut Muffins

I didn't care for the amount of nutmeg so I may reduce that next time. That being said, these were good the first day and even better the second! I removed the muffins immediately from the pan, transferred to a bowl, drizzled with the butter, and then shook them in a bag with the cinnamon sugar mixture.

Bada Bing Pork Chops

We used boneless pork chops and marinated for about 6 hours. The chops were good but I found them a little tangy for my preference. I think I may prefer them with less Worcestshire as I felt this flavor to be the most overpowering.

Roasted Vegetable Orzo

I tried another users suggestion of cooking the orzo with with just enough water and wine so the pasta would absorb the liquid, but it turned gummy. The flavor was still amazing so I will definitely make again, but this time I will boil the pasta as the recipe indicates so it is cooked perfectly!

Dijon Crusted Halibut

I used 1/2 Tbls of mustard after reading others' reviews that it was too tangy. I also used shredded parmesan cheese instead of grated and panko bread crumbs. Instead of mixing the butter, bread crumbs, and cheese, I drizzled the butter, sprinkled the cheese, and then topped with bread crumbs before tossing in the oven at 425. After 14 minutes, I switched the oven to broil for about a minute and browned the top. It was perfect!!!

Bodacious Broccoli Salad

I made this salad hoping for something closer to a similar salad a friend makes, but this was too salty and a little bit too peppery for most people. Interestingly, my friend's salad is made with plain vinegar and no salt and pepper. It's a sweeter salad but it is delicious!

Green Chile Cheese Beer Bread

My bread was also mushy in the middle but I believe it's because my green chiles were too watery. The bread tasted fantastic though so I will make again. Next time I will use 2 cans of whole green chiles, drained and patted dry, then diced.

Brownie Batter + Cupcake = The SECOND BEST Cupcake. Ever

These tasted amazing but I had a hard time getting the centers to cook completely. That being said, thanks for the great recipe (I'll be trying again) and for recommending the fluffy peanut butter frosting!

Cake Batter Ice Cream

HEAVENLY!!! I used skim milk and whole milk in place of the heavy cream and it turned out amazing! It was more like soft serve when it was done in the ice cream mixer but after freezing all night it is still soft enough to scoop but still hold it's shape! Thank you!

Frosted Banana Bars

These were really good! I added a touch of cinnamon to the bars before baking and used the Whipped Cream Cheese Frosting from this website and substituted Cool Whip for the whipping cream. They turned out phenomenal!
