Barley Bake

Good flavor but took much longer than 75 minutes to cook--closer to 3 hours, which seems excessive for a simple side dish. Next time I will cover it for the first half. Will try with almonds next time, as my kids didn't care for the pine nuts. I also added some truffle salt and garlic salt. Thinking a splash of marsala wine would be good too. --Susan C.

Grandma B's Bean Soup

As suggested by other reviewers I used 4 cups of chicken broth and 3 cups of water and bay leaves. Omitted the potatoes. Added seasonings--salt, pepper, garlic salt and about a TBSP of brown sugar--at the end so as not to toughen the beans during cooking. The brown sugar gave it that subtle sweet/smoky flavor that I associate with ham and bean soup. I also cooked the beans with a ham bone from a leftover spiral ham and added the cubed ham after about 8 hours on low to retain the ham's flavor. Delicious with warm cornbread! A great basic bean soup starter recipe!--Susan C.

Slow Cooker Carnitas

This was delicious, but I did a little tweaking of the recipe. I recommend salt and peppering the meat first and browning in olive oil on all sides to caramelize it before putting it in the crock pot. I also omitted the cinnamon and added fresh garlic, chopped cilantro and sliced yellow onion. Halfway thru I added the juice of one lime, which really brightened the sauce/flavor of the meat, and some garlic salt. Served it soft taco style on corn tortillas with shredded green cabbage, jack cheese, salsa verde from Trader Joes, chopped scallions, cilantro, a little sour cream and a squeeze of lime juice. Muy delicioso!!!!

Super Easy Slow Cooker Chicken

I changed a few things to this recipe and it turned out delicious! As another reviewer suggested, I dredged the chicken in herbs/spices (paprika, fines herbs, thyme, Lawry's seasoned salt, garlic powder, black pepper and a little flour) then browned it in a skillet. Transfered that to the crock pot, then sauteed chopped onion, garlic and mushrooms in a little butter, added port wine and let it simmer for a bit to burn off the alcohol. Added that to the crock pot, along with low sodium cream of mushroom soup and 1/2 a chicken boullion cube. Cooked on low for about 6 hours. Served over rice. Had great flavor and nice brown color due to the browning of the chicken. Also, the longer cooking time made it super moist.

Extreme Banana Nut Bread 'EBNB'

If you are looking for a moist, delicious, flavorful banana nut bread, look no further--this is it! My family loved it so much, we made it twice in one week. Each time it was devoured within a day or two. It was an especially big hit with my 4 year old--even with the walnuts, which I doubled. I added about a tsp. of cinnamon and a tsp. vanilla as well. This is the only banana bread I'll ever make.
