Kalamata Pork Tenderloin with Rosemary

This was an excellent dish! My husband who is a "new" food skeptic really enjoyed the mixture of flavors. I served it with garlic rosemary smashed potatoes,asparagus with lemon butter and a wonderful bottle of merlot in a romantic candlelit setting. Thank you for this recipe.

Sloppy Joe Sandwiches

No more Manwich! EVER!! This was extremely easy to make and the entire family enjoyed it! I am not one to follow recipes to the letter - I added a can of tomato sauce, used less ketchup & brown sugar, and added chili powder. I made 10 servings hoping for leftovers, but the 5 of us ate it all up!!!

Sun-Dried Tomato Basil Orzo

I enjoy this dish chilled. I don't really care for parmesan cheese, so I omitted it. Made it greek style by adding tomato basil feta cheese and chopped kalamata olives. Served it with pork tenderloin & steamed asparagus.

Creamy Au Gratin Potatoes

I have always wanted to make au gratin potatoes and finally did! After reading a few of the reviews, I did make a few additions. I sprinkled minced garlic, pepper & parsley flakes on top of each potato layer. I followed the directions for the cheese sauce but added fresh grated nutmeg as I do for all my "cream" sauces. This casserole turned out very good! Even picky DH who said he hates au gratin potatoes ate seconds! This is a keeper!

Slow Cooker Chicken and Dumplings

This was VERY good! I was concerned that the dumplings were going to be doughy, but they weren't! I followed the advice of 90 min for the dumplings. There were no leftovers :( I added fresh carrots, celery, frozen corn & peas. I used 2 cans of cream of chicken and one can of chicken broth, since everyone likes LOTS of creamy gravy. The family wants this meal at least twice a month! Thank you for a great recipe!

Funnel Cakes I

What a fun family activity and at a minimum cost! And we don't have to wait for the State Fair! It got to the point where the kids were making letters to spell their names! Used a large mouth funnel for safety. Lined the countertop with waxed paper for easy cleanup. Thanks!

P.J.'s Fresh Corn Salad

This was awesome! I used thawed frozen corn & peas. My kids don't care for bottled Italian type dressings, so made my own with EVOO & balsamic vinegar and a bit of sugar. They ate the peas!!

Artichoke Chicken

This was absolutely fabulous! I used half LF Mayo & half LF sour cream, added more artichoke hearts, and 4-cheese Italian blend. My guests now think I am a gourmet chef!

Quick and Easy Chicken Noodle Soup

Veggie Stir-Fry

This was excellent! I was looking for a recipe for the "sauce" for stir-fry. I don't follow many recipes as far as measurements go. The sauce in this recipe fit perfectly! I marinated some strips of tri-tip in soy sauce and added MANY veggies. My hubby who is a steak & potatoes guy LOVED it! Thanks!

Eggplant Au Gratin

I LOVE eggplant and have making it this way for many years. The only differences.. I grill my eggplant first instead of baking. Sometimes I add sliced tomatoes in the layering process. YUM-O!

Maria's Stuffed Chicken Breasts

Excellent! I usually alter most recipes, but the only change I made was to use half of the ricotta in the recipe(dieting)and omitted the eggs. After reading the reviews, I made the entire batch of cheese-spinach recipe,stuffed the chicken breasts and mixed the rest of the spinach-cheese mixture with more sauce Poured the sauce over the chicken and baked for 45 minutes.Removed the chicken breasts to plates for serving and added rotini pasta to the sauce and served.Hubby had a "I'm not sure about this" look on his face when served, but a "YUM" compliment upon tasting.

Egg and Sausage Casserole

Excellent!My picky kids loved it!and my quiche-hating hubby ate it up!I made a few changes. 10 eggs, half the cheese (dieting!),salt,pepper,garlic powder, and used tarragon instead of oregano.I also baked the dough 7 minutes before adding egg mixture & sausage. Baked for 45 minutes uncovered.This is definitely a keeper!!

It's Chili by George!!

This was a first time for me. My husband has been asking for chili since Sept. So, I perused the chili recipes available and thought this one sounded like a winner and... it WAS! He was in awe that it tasted so good the first night, the second night and lunch the next day! The spice mixture is perfect. The only thing different I will do next time is use shredded beef cooked in the crockpot all night before I make the chili the next day! YUM! Thank you!

White Cheese Chicken Lasagna

I was skeptical to serve this to my "steak & potatoes" man, but he LOVED it! I did add mushrooms, but followed the rest of the recipe; however, I am really bad about not measuring... I used a lot more cheese than called for and had to thin the sauce with a little more milk. It turned out wonderful! Thanks! This one is a KEEPER!

Chicken or Turkey Tetrazzini Deluxe

This was an excellent dish! I made a few changes. I sauteed the mushrooms in butter then let them simmer in white wine. I left out the green pepper, sherry, and onions (I HATE onions!!). Added cream of chicken soup (since we like it more creamy), carrots and broccoli. The only problem was I didn't make enough for leftovers! This one is a keeper! Thanks Doris!

Quick and Easy Alfredo Sauce

This is a winner! Especially with my picky eater children! I'm not one to follow a recipe's ingredient list to a tee, and I don't care for too much parmesan. I used a 4 italian cheese blend and not sure how much. We will use this recipe often when looking for a quick meal. Thank you for this recipe!
