I will never live down a "Green Pasta" dish I made from a recipe. Needless to say, it was in the trash after one bite.

Rempel Family Meatloaf
I used this recipe as a guide and modified it to what I had on hand and my preference. I used 1 lb. of ground sirloin and 1 lb. of ground pork, for the cracker crumbs, I used 1/3 c. Ritz crackers and 1/3 c. Cheez-Its, used 1 c. cheddar cheese, sifted onions from dry onion soup mix (as suggested), 1/4 c. diced onion, 1/4 c. diced green bell pepper, 2 eggs, 1/8 c. ketchup, 2 T. steak sauce, pepper to taste and though this sounds weird but tastes awesome is 1/4 c. cocktail sauce (It gives a great zip to the meatloaf but is not distinguishable). I cooked in 350 degree F oven for 75 minutes. Did not top with any sauce but left BBQ and steak sauce at the table - none was used as the meatloaf was great without it. AWESOME RECIPE! Chicken-Stuffed Shells with Sherry Sauce
Excellent dish! Used a rotisserie chicken to save time, doubled sauce ingredients (though only used 1 1/2 overall) and doubled the ricotta. I didn't separate mushrooms from sherry liquid after cooking - just dumped all into ricotta mixture. Added 1 bunch of fresh steamed spinach. Used 8 oz of manicotti and filled all but 3 shells. Heated 1 cup of chicken stock and 1/2 cup sherry with thyme and pepper for roux mixture since I did not have cooking liquids from the chicken. Unable to get greyere cheese at the market, so subbed swiss cheese (approx. 1 1/2 cups combined). This is a very rich dinner. Everyone raved!

California Roll Salad
Excellent! We did not use lettuce in our salad as it was a side for 3 very hungry people. Loved the dressing. Thank you for posting!
