Chef John's Pumpkin Pancakes

This is a great recipe! I'll admit I was skeptical when I watched the video and saw that lemon juice and lemon zest were included but my skepticism vanished as soon as I tasted these. The lemon juice and zest only serves to brighten the flavor of the pumpkin and makes the flavor light and full. These pancakes are extremely light and fluffy as well. My husband remarked about that with the first bite. Don't be fooled into thinking these will be dense by how thick this batter seems, just spread it out in the pan with the back of the measuring cup if you want them to spread out more. Don't add more liquid! The only changes I made were that I used all white sugar instead of brown and white. And I only did that because I had already measured out most of the ingredients before I realized I was out of brown sugar. These were still delicious! I can imagine they'll only be better next time when I have brown sugar to use. Also, I used a can of evaporated milk instead of regular milk only because I had too many cans of evaporated milk in my pantry and saw this as an excuse to use one. This is my "go-to" recipe now for Pumpkin pancakes!

The Best Potato Salad

This potato salad recipe is delicious! The test of many dishes for me is how much is left after a pot-luck, and not much of this was left at all (and that's only because there was a plethora of food there). I didn't add either the pepperoncini or the black olives. This dish needs some color so, I threw in a handful of dried parsley flakes and about 1 TBL. of dried dill weed. It only added to the flavor and presentation!

Baked Corn Pudding

I've made this dish twice now and both times I've taken it to a potluck and both times it was totally devoured!!! This last time I got reviews such as "amazing" and "this was the best dish here." I made some modifications based on prior reviews. I reduced the sugar to 1/4 cup and I added 1/4 cup of corn meal to the recipe. I left everything else the same. It took a full hour and a half on 350 both times to cook until a knife would come out clean.

Rich Penne Pasta

I followed the customized version's suggestion of using a combination of cream cheese and sour cream. I also added: 1) 1 tsp. each: oregano, basil and dried red pepper flakes 2) Couple dashes of cayenne pepper 3) Salt and pepper 4) Chopped green pepper With the extra seasonings and the green pepper this recipe turned out great! This is definitely something I will make again. Delicious, fast and easy.

Polish Reuben Casserole

My husband and I both thought this was very good. I scaled the recipe down to 4 servings and we had plenty of left-overs for the next day. I didn't have egg noodles on hand so I substituted whole-wheat macaroni which I partially cooked and it turned out just fine. Good flavors and very filling. I'll definitely make this again!

Chicken Breasts with Balsamic Vinegar and Garlic

Delicious! I, too, omittted the flour as other reviewers suggested. It turned out moist and flavorful. I served it on a bed of whole wheat pasta and my hubby loved it! Even suggested that this would be a great recipe to use for entertaining. I will use this recipe often!

Pork Chalupas

I read the other reviews and reduced the amount of beans by a cup which made it come out with a good meat/bean ratio. I also exchanged some of the green chilis for chipotle chilis in adobo sauce. However, with all the chili powder too, this recipe came out way too spicy so I cooled it off by adding a cup of plain yogurt and it was a hit at the pot luck. Not a bean was left and people were raving about it!

Pineapple Carrot Salad

I substituted coconut yogurt for the pineapple yogurt, added some chopped pecans and eliminated the sugar altogether but added a few dashes of cinnamon and it was a hit! I had even enlarged the recipe to feed 10 for Thanksgiving and there wasn't any left. I like this soooooo much better than the mayonnaise based dressings.

Apple Honey Bundt Cake

This cake was a hit! I took it to a church fellowship and it was gone in less than 5 minutes! I followed the recipe exactly and it came out great. I may add a full cup of nuts next time, but only because I REALLY like nuts. Good flavor but not too sweet and really moist. I will definately be making this again!!

Apple-a-Day Pork Chops

I didn't have currants so I substituted dried cranberries. I also didn't have Marsala wine, so I substituted a dry red wine. It still turned out great! My husband's comment after his first bite was: "Mmmmmmm, yeah!" This is one I will be making again for sure!
