Double Tomato Bruschetta

Delicious! I used dried basil, and omitted the olive oil since my sun-dried tomatoes were pretty oily. I let the mixture set in the fridge for approx. 3 hours, then cubed mozzarella since it was fresh, and stirred it into the mixture before placing on the baguette slices and broiling. Simply divine! I highly recommend this recipe!!

Slow-Cooker Chicken Tortilla Soup

I made this exactly as written, and it was DELICIOUS!! I highly recommend this recipe-usually I like to do these from "scratch" but it was a quick and easy recipe that got compliments galore!

Lettuce, Avocado and Sunflower Seed Salad

I pulled this recipe for my young niece, who just recently started eating salad and veggies. I wanted something simple, as she thought that eating healthy was "too much trouble". This recipe worked as a great example of "easy", plus it was a great jumping point to show her how easy it is to modify dishes like this. While this is not what I would choose, I gave it 4 stars for ease, and for fitting my needs. It makes a great foundation for additions.

Taco Seasoning I

This was great! I made this for my sister, who is always spending money on those packets of seasoning. I omitted the salt, due to her high-blood-pressure and she and her family don't even miss it! I am now keeping it on hand myself, for those quickie taco/burrito nights when I don't have much time.

Honey Mustard Salad Dressing

I made this exactly as described. It was too thin, too vinegary and did not have enough of a mustard flavor for my taste. I ended up doubling the mayo, and also approx 1/8 cup of regular and 1/4 cup of dijon mustard, and doubled the honey. Next time I will leave out the sugar, as I prefer honey as a sweetener.

Glazed Corned Beef with Lentils

Broiled Tilapia Parmesan

Incredible! I made this recipe exactly as given and to say it was a hit would be an understatement. Where I live, tilapia is a very reasonably priced fish, this recipe really turns it into a delightful main dish. I have also used the mixture with chicken breasts, baked in the oven, they were a huge hit as well. I have also added frozen drained spinach and sauted mushrooms, then added to the tilapia or the chicken it makes a nice addition and a bit of a change is nice when a dish is in "heavy demand".

Old Bay® Catfish Fry

Fast, easy and Delicious! This was my first time with catfish. We don't fry much, but the catfish was so moist and flavorful the whole family loved it. We will definitly add this one to our "favorite" list. Hurray for old bay!

Quick and Easy Clam Chowder

EXCELLENT!! I work at a restaurant with "award-winning clam chowder" and I am very choosy about the chowder I eat...this recipe is delish!! I made some recommended modifications; ie: 2 cans cream of potato, 3 cans clam chowder and 4 cans of clams(using the liquid from 2of the cans. I was running out of room in my slow cooker, so I ended up only using about 3/4 QT half-and-half, but we like it thick. No problems with the cooking time in my Rival Slowcooker on low, I just checked it regularly to make sure. I generally don't try recipes with pre-packaged or canned ingredients, but this was wonderful and I will be making it again-next time with potatoes!

Apple Dumplings II

VERY tasty-but my apples were too big for the amount of pastry, so I ended up cutting the apples into pieces. Next time I will double the pastry. I made this for my son who LOVES apple pie and he claimed it was the best he has tried. My husband (who hates apple pie) just devoured this!

Mexican Chicken Corn Chowder

delish! I made this exactly as recipe the first time and everyone loved it-I have since made it with turkey breast and omitted the hot sauce but used pepperjack and added peas and an extra can of corn(not cream style). I have taken it to two pot lucks with fantastic results.

Artichokes

This was a great starting point-I literally slathered the artichokes with butter and (minced)garlic instead of putting between the leaves, and I took the suggestion about using lemon-I laid a lemon slice over each one. I filled the pot with water to the bottom of my steamer insert and did not have to add any water while they were cooking. I also added a chicken bouillon cube to the water along with 1 teaspoon of my favorite "Trader Joe's Pasta seasoning blend". Because my 'chokes were big-I extended the cooking time to 1 hour. I let them sit in the covered pan for about 15 minutes prior to serving, and they were PERFECT. I served these with a lowfat mayo and fresh basil pesto I mixed together-my family asked for them the very next night!!

Dutch East Chicken Wings and Rice

This was wonderful. I used chicken breasts and thighs instead of wings, and the aroma while it was cooking drove the whole family crazy with anticipation. A very savory dish and one I will be making again and again.

Laurie's Shepherd's Pie

this was super easy to make and a huge hit...although I now make it with red or yellow bell peppers instead of green, and I add green peas and I mix it all together before I put it in the crust. I also substitute regular corn for the creamed and make a gravy with the pan drippings for more flavor. Instead of putting the cheese on top of the potatoes, I grate it and mix it in with the potatoes so it doesn't brown too much.
