Zucchini Relish

Really nice. Easy, light, and flavorful. I think it would have been even tastier had I used the called-for fresh basil instead of the dried I had on hand. Be sure to chop the veggies into smaller bite-sized pieces.

Krissy's Best Ever Corn Muffins

Wonderful! I made this recipe using Splenda and whole wheat flour and the result was sweet, moist cornbread muffins. My husband (who considers himself a connoisseur of cornbread) loves them, too.

Popcorn Macaroons

These have potential, but they need a lot of adjustments. You definitely need to measure the popcorn AFTER processing it. Mine weren't really sweet at all, and the end result was more meringue than macaroon. I think they could be good with the right mixture of spices and possibly some vanilla or almond extract. I'll keep experimenting when I have leftover popcorn.

Mediterranean Salmon

This was simple, quick, and delicious. I used a large, single salmon filet (halved the recipe) which I split in two and served over spaghetti squash and roasted vegetables.

Kickin' Meatballs

Sweet and Sour Sauce II

Very nice! I made the sauce with Splenda and cooked it with the Kickin' Meatballs recipe from this site. Made me wish for Chinese chicken to dip in it.

Sweetened Popcorn

The flavor of this popcorn (using Splenda) was really nice, but I think I made an error in mixing the syrup and popcorn. I scooped the popcorn into the pot a little bit at a time which resulted in some very soggy pieces while others didn't get any coating at all. Next time I'll pour it all into a larger bowl to cook.

Mexican Whole Wheat Flour Tortillas

These were so easy to make! I used olive oil and all King Arthur white whole-wheat flour. It took a little experimenting to get the thickness/thinness right when rolling out the dough (and I still haven't perfected the round tortilla), but all of my first batch turned out.

Raw Hummus

I was really excited to make this hummus after reading the great reviews, but after finishing it, I would be very hesitant to share it with anyone else. The flavor is odd to say the least, and I couldn't get the hummus smooth no matter how many times I ran it through the processor. It may be that I don't have a powerful enough machine to get the beans as fine as they should be, but this hummus fell way below my expectations.

Garlic Brussels Sprouts

My husband loves brussels sprouts, but I can't stand them. I tried this recipe last night and we both thought it was delicious! The only change I made was eyeballing the oil instead of measuring it, so I think I ended up using a little less. We'll definitely be eating these sprouts more often.
