Alicia's Aloo Gobi

2 adults and 1 child loved it. 10 year old wasn't as thrilled. I cut the cayenne in 1/2, but was told it should be hotter. I think this will be even more awesome tomorrow after the flavors marinate. Thank you! Served over brown rice.

Vegetarian Korma

FANTASTIC! Kids and husband loved it! I used Spirited Sarah's spice mix in place of plain curry: 3 1/2 tsp curry powder, 2 1/2 tsp ground cumin, 1 1/4 tsp turmeric, 3/4 tsp ground cardamom, 1/4 tsp ground cinnamon, 1/4 tsp cayenne pepper, 1/8 tsp ground nutmeg, and a dash of ground cloves. I also used full-fat Thai Kitchen coconut milk for the cream. The potatoes took a long time to cook so I added the cream earlier and cooked it 10 min. longer. I also omitted the tomato sauce since we were out. SO good over brown rice. And gluten free and dairy free. Thank you!

Homemade Black Bean Veggie Burgers

Wonderful! Kids and husband ate it. I used black lentils, added some Braggs Liquid Aminos and used a LOT of gluten free bread crumbs to hold together. We grilled on oiled sheets of aluminum foil, about what they suggested-- 8 min each side. Just flipped the whole package to get the other side. Great with goat cheese!

Quinoa and Black Beans

This was surprisingly good. We haven't done much quinoa and this was a good way to fix it. My 8 and 11 year olds and my husband liked it. We used chicken broth instead of vegetable broth, added a few veggies and browned ground hamburger and a few leftover chicken sausage bits. Topped it with a dollop of Greek yogurt, shredded pepper cheese and cilantro and had an excellent one-dish meal. Thank you!

Fisherman's Quick Fish

Everyone liked it--husband, kids (including picky kid.) I'll definitely do this one again. I had no idea what to make for dinner and quickly cold-water thawed the fish, cut them in 1/2 to make them thinner as suggested earlier, and marinated in homemade dressing for 5 min. Only change was I used 1/2 c chips and 1/4 c. almond meal. Great!

Super Easy Salmon Cakes

I added dill (no onions) and a dash of garlic powder. Cracker crumbs mixed w/bread crumbs, too. A little lemon juice and pepper. Sauteed in coconut oil with a little butter. We all loved it! Served with Eating Well's dill mayo (with yogurt and kefir.)

We used thighs. Not a lot of meat, but good. Make sure to add the salt--I didn't salt it enough. I did what was suggested: bake skin-side down first, then up for the last part to make crispy.

Zesty Slow Cooker Chicken Barbecue

Pretty good--3.5-4. I used 1 large (bone in) chicken breast, and about 1.5-2 c. chicken broth. Shredded after several hours (took out bones) and put in 1/2 c. KC Masterpiece. A bit too sweet--added Worcestershire sauce (1 T?) and 1/4 c. Italian dressing. No brown sugar. Pretty good sandwich filler--all but youngest liked it.

Granola Bars III

Excellent! Stayed together, too. Used ww pastry flour, 1/4 c. powdered milk, some coconut oil for the vegetable oil, regular organic sugar instead of brown (and only 1/2 c). Will try with chocolate chips and pb next time. Great!

Cod with Italian Crumb Topping

We liked this--used cod and mayo (not the egg white) and some seasoned bread crumbs. Also didn't have parm cheese so added a tiny bit of feta. All ate it.
