Homemade Butter

Homemade butter really is this easy - you can use any electric mixer or even an egg beater if you want to build some muscles. I put the lump of butter in a cheesecloth/muslin then squeeze out the excess buttermilk.

Great recipe. Make sure you only let the dough rise for 30 min once rolling them out - too little and they will be tough, too long and they won't puff into pockets when baking.

Cheesy Bacon Muffins

Great recipe - very versatile. I increased the baking powder to 1 tablespoon and decreased the sugar to 1 teaspoon. I made mine into 36 mini muffins and they baked in about 15 min.

Oatmeal Praline Cake

A good cake recipe, but the topping on mine all went to the sides of the pan! When I took it out the sides of the cake had a jelly-ish coating from the icing mixture. It tasted nice, but it wasn't what I was expecting.

I found these quite bland - definitely use sharp cheese and don't be afraid to spice them up a bit more - I'll put in crushed garlic and a heap more herbs next time.

Jewish Apple Cake I

I used lemon juice, cut the sugar to 1 1/2 c and increased the vanilla to 1 tbsp. I found mine was done in about an hour in a 9" square tin.

Raisin Cinnamon Bars

When I looked at the amount of dough I thought it wasn't enough for a 9x13 pan, but the dough rises a lot. I found mine to be crumbly, but they were delicious. I also soaked the raisins before adding them for extra moistness.

Crunchy Chicken Balls

I altered the recipe a bit to suit what I had on hand - used minced chicken bacon, ranch dressing instead of mayo and rolled the balls in breadcrumbs. I think heating the meat so the cheese melts a bit when you put them together makes them turn out better.

Apple Cake I

5 stars with alterations - 3/4 c oil, 3/4c brown sugar and 3/4 c white sugar. I also added 1 t mixed spice. I like this cake more than some apple cakes because it holds its shape well - it's not all soft like a German apple cake.

Amish Friendship Bread I

This is a really good cake - it's nothing like bread. The yeast gives it a definite zing that makes people wonder what's in it. I added 1 cup sultanas and changed the sugar to 3/4 c brown sugar and 1/4 c white sugar. The quantity here works well in a high sided 8" square pan - it's good to have a taller cake as it seems to stay more moist. When I did this I put the whole mixture in one pan and it baked in about 1 hr. Lower the temperature to about 335F to prevent burning on the bottom.

Cinnamon Swirl Bread

This bread is delicious. Be careful, it is very heavy, and you can taste a hint of egg in the final product. It does need the foil over the top to prevent excess browning on top. Mine came out with a very thick crust by the time it had been in long enough to cook in the middle.

Chocolate Cookie Cheesecake

Wow! You only need to serve about a square inch to your guests with this one! Rich and delicious. I wouldn't change anything. Just make sure you have a tall cake pan to bake it in so it doesn't spill over the top.

Pepperoni Polenta Pizza

I blind baked the polenta for 10 min at 425 but it was still very soft. Maybe if it was fried it would go crisper? It definitely needs salt or stock in the base - I added 1 tsp dry chicken stock powder and it wasn't enough. Topped with pasta sauce (all I had), chicken bacon and edam cheese - the liquid from the pasta sauce sat on top. I think tomato paste would be best.

Healthy Banana Cookies

Absolutely delicious. Don't expect a normal cookie because these don't even have flour! I added 2 teaspoons of Splenda and used 1 1/4c sultanas and they were sweet enough. I also upped the vanilla to a tablespoon, and added 1/3 c of peanut butter. Great warm from the oven.
