Slow Cooker Western Omelet

As I suspected when I was pouring everything in my slow cooker, WAY TOO MANY POTATOES! Next time I will ony use half of the bag. I added a little seasoning on each layer of potatoes, and used 1 lb cooked breakfast sausage instead of ham. After 6 hours on low, it was ready. Some slow cookers heat differently, so your best bet would be to check on it periodically. I loved it, and will definitely be making it again!

Greek Lemon Chicken Soup

Great chicken soup recipe! My family gobbled it up! My changes: added 2 tsp Greek seasoning to the lemon base; and I used orzo instead of rice. This one is a keeper! I will definitely make this again!

Lemon Pie II

Husband and 2 yr old liked it, 5 yr old didn't. I increased the lemon juice to 1/2 cup and husband said it wasn't sweet enough, so next time will probably use less lemon juice. Quick and easy to make - the kids helped me.

Fluffy Pancakes

i replaced the shortening for melted butter and added a capful of vanilla extract. everyone in the house gave these a thumbs up! i will probably never get the box mix again! i love the fluffiness of the pancakes, and they taste better than the box mix kind.

Broccoli Rice Casserole

I doubled the recipe and it made enough for two 13x9 Pyrex dishes! I subbed the white rice for brown rice. This was very cheesy and simple to prepare. It was a hit for Thanksgiving Dinner!

Four Cheese Macaroni and Cheese

My family loved this recipe! I baked it for 20 minutes, then stirred it up, added a little more cheese to the top, and baked it for about 5 more minutes. Next time I will combine the milk and egg as suggested.

Soul Smothered Chicken

Made this for my husband, because it's one of his favorite dishes. He LOVED it! The 3-year-old gave it a thumbs up also! I used 8 thighs instead of a whole chicken and slightly modified the recipe for somewhere between 4 and 8 servings. I also omitted the cayenne pepper. This was a great meal and I will definitely make it again!

Pork Chops Stuffed with Smoked Gouda and Bacon

WOW!! These chops are OUTSTANDING! The smoked gouda cheese gives a great flavor. I had to use more than one toothpick to keep it closed. I broiled them, but will try grilling next time. My husband really enjoyed these!

Tres Leches (Milk Cake)

I've made this twice and gotten rave reviews every time! I followed others' advice and 1. separated the eggs before mixing; and 2. reduced the amount of sugar used in the topping to about 1/4 or 1/2 c. Also, poke LOTS of holes. Don't be scared to pour ALL of the milk - especially if you've poked lots of holes. This cake is moist but not too mushy, and has a good flavor. I'm not wild about the consistency of the cake, but I think that's because of all the eggs in it. It's still a yummy cake and I will make it again!
