Baked Italian Lemon Chicken

My family loved it! A couple of minor changes: I soaked the chicken in cold salt water for about 45 minutes. I also cut the butter to 3T, and I pounded the chicken until in was very thin. I only cooked for 15 minutes and then broiled for 3 to give it color.

Pesto Chicken Florentine

I coated my chicken breasts with Cajun seasoning and baked at 350F for 20 min. 12oz box of gluten free noodles I used light jar Alfredo 3T pesto 3 large handfuls spinach 1 can of tomatoes, drained

Quinoa and Black Beans

I used 1 cup of quinoa, 1 can of broth, and white wine to finish up the 2 cups of liquid. I also added 1 can of diced tomatoes, and 1 can of diced chicken. This is very similar to the CBW Power Bowl so next time I am going to add some Romaine and make the jalapeño cilantro sauce to put on it.

Satiny Chocolate Glaze

I put on top of a chocolate cake recipe I found here called Too Much Chocolate. I also used the cooking spray on the spoon for the corn syrup and made it in the microwave.

Yogurt Salad Dressing

I only used 1/2 c of yogurt (I used Greek too.) because I was only making enough kale for 2. I did keep the lemon and mustard amounts the same to give it a bit more flavor.

Lion House Wassail

My favoite recipe so far. I did not have the allspice berries or the whole cloves on hand so I substitued 2 tblspn of pumpkin pie spice. It tasted wonderful. Oh, I also put a shot of spiced rum in it sometimes!

Crustless Spinach Quiche

Absolutely wonderful! It was so easy and everyone loved it. I did double the recipe and put in a 13x9 pan. I also made it the night before and cooked it in the morning so it would be easier. I am going to bring it to work now.

Heavenly Halibut

Sprinkled with salt and lemon pepper before cooking at 350 for 12-15 min. Added a dash os red pepper flakes to parmesan mixture. After putting mixture on topped with lemon pepper. Broiled for 2-3 min.

Grilled Teriyaki Beer Chicken

I used 3 lbs boneless, skinless chicken thighs. I cut the salt down to 1 tablespoon and the paprika down to 1 tablespoon. It was plenty spicy. I did not oil the chicken. I only marinated it for 1 hour. I then cooked the chicken in the marinade in the oven at 350 for 20-25 minutes. Excellent! Everyone enjoyed it.

Blue Cheese Crusted Filet Mignon with Port Wine Sauce

Wonderful recipe. We cooked them on the grill & then brought in and put just blue cheese on them & put under broiler. I did use a strainer to separate the actual sauce from the thyme.

Pineapple Angel Food Cake I

I made this 3 times now; two times on the same day made with different cake mixes. I had a Betty Crocker in my pantry and needed one more since I was making them for a Church function. I bought a store brand which is a two step package. It did not mix well nor foam up like the Betty Crocker package. When it finished it was flat while BC turned out great. I love this cake but the directions really, really need to be more specific. YOU MUST USE THE SINGLE STEP ANGEL FOOD MIXES FOR THIS TO WORK!! Also, the crust should be brown and starting to pull from the edges.

Root Beer Pork Chops

Bought 2L bottle (cheaper) . Marinate with root beer, remaining beef broth, and Worcestershire. Sauce - added more beef boullean (1tsp?), deleted brown sugar, added a bit of tobacco to hot sauce, a pinch of cayenne pepper, 1 tblsp Worcestershire (takes about 30-40 min to reduce to about 3/4 cup)

Iced Pumpkin Cookies

While I loved the cookie the first time, I changed just a couple of things the second time: I love pumpkin taste so I added a whole can of pumpkin and doubled the "pumpkin type spices." I added chocolate chips to the last half of the batter. YUM! I added cinnamon to the icing.
