Chef John's Stuffed Peppers
Loved these! Yes, they're labor intensive and take up a lot of dishes but I absolutely love this recipe. I use ground chicken or ground turkey when I make them to cut down the calories, and I think that allows the spiciness from the hot sausage to shine as well as the cayenne and crushed red pepper flakes. I've made these for both my family and friends and everyone left happy and full. I recently made them for my "chicken-a-tarian" friend and even without the sausage she loved them, so there are a lot of alternatives you could use while making these to increase/decrease the heat and to make them healthier.

Chef John's Caramel Chicken
This was delicious! I only had the bone in skin on thighs, so I took off the skin before cooking. I followed the recipe exactly and added some sliced peppers and mushrooms to make it a full meal. My husband and I devoured it! If you're a fan of sauce I would double the recipe so you have extra to serve on your rice and veggies.

Chickpea and Chicken Curry
The recipe, if cooked as directed is very bland. I tasted the sauce through out cooking to make sure it was the right consistency and was underwhelmed. When I realized this, I added about a half teaspoon of cayenne pepper and an additional teaspoon of curry powder. I then added about a half cup of light cream after the 10 minute simmer and brought it back to a boil stirring constantly until it thickened a bit. I found it to be much better this way. Not quite curry, but still tasty.
