About this Cook
I grew up in a small town in Western New York State. We ate mainly processed, store-bought meals. Although my parents were great cooks, they didn't have much time to prepare healthy, home cooked meals. Now, as I'm trying to be an "adult," I'm attempting to learn how to balance life at work and at home while finding the time and energy to eat healthy. Fast food is just so much easier! :)
My favorite things to cook
I love all things CARB. Bread, pasta, potatoes, you name it. I'm trying to lessen my carb load and eat lighter versions of my favorite dishes. I don't really have a cooking favorite. If it turns out successfully and gets rave reviews from my roommates, it becomes a favorite to cook.
My favorite family cooking traditions
My father makes spaghetti as our Christmas meal. He is a wonderful cook. He gets out a huge cauldron and makes his own sauce, using at least 4 different kinds of meat in the sauce. And he doesn't start cooking until after our midnight church service on Christmas Eve. My favorite part is waking up in the middle of the night and hearing him singing in the kitchen. And the smell makes my mouth water until the next afternoon!
My cooking triumphs
A chicken lasagna that my roommate declared as the best lasagna she's ever eaten (this was directly after she proclaimed to be a lasagna expert, hence very picky).
My cooking tragedies
I made a salad and an oil based dressing to go with it. The dressing was awful! We ate the salad without any dressing because it was so bad.

Easter Breakfast Casserole
I made this this morning for a dozen family members. I took the other review into consideration. I used a 9 X 13 pan, added 13 eggs, 3 cups of cheese, precooked the bacon and the potatoes O'brien. I added some garlic powder, onion powder, salt and pepper. It needed 15 less minutes without the foil and it was perfect! Thanks!

Burgundy Pork Tenderloin
I'm only giving it 4 stars because I didn't follow the recipe exactly (otherwise I'd give it 5!). I hate reviewing recipes that I don't actually follow, but I didn't have enough wine so I improvised a bit :) I put in one cup of wine (petite shiraz...again, improv) and 1 cup of beef broth from a bouillon cube. I didn't have onion or celery, so I put in some dried minced onion (though I don't think it made a difference) and 2 packets of gravy. This was delicious! And I'm such a beginner at this stuff and I hate making pork because it's always dry and something always goes awry. But this was the best pork I've ever made. Thank you!

Big Soft Ginger Cookies
I just took these out of the oven about 10 minutes ago. They are DELISH, but flat! I followed the recipe as is, so I'm not sure what I did wrong. Maybe I flattened them too much before I put them in the oven? I don't know. So they aren't beautiful, but they taste wonderful. I made these for my boyfriend, but I'm not sure they'll be here when he gets home tonight! The taste and is 5 stars (and 5 stars for how easy it is!), but I'm giving this 4 since mine are flat and I followed the recipe exactly. But I'll making these again and will tweak to see if it works. Thanks for a great recipe that I know I'll turn to again!!
