Pesto Turkey Burgers

Very good burger. With the turkey it is lighter than beef and the pesto adds a great little extra flavor. We're definately going to have these again!

Lemony Chicken Noodle Soup

The idea of Lemony Chicken Soup gets 4 stars... the recipe itself needs a lot of reworking. The measurements are totally off. If you make this to the recipe, your soup will turn out funny. Here are my recommendations: 1/2 large onion, 2 Tbls. olive oil (no butter needed!), 1 pound chicken (at least!), 1 clove garlic, 3-4 cans chicken broth, 1 medium carrot, 1/2 cup peas, 1/2 tsp dried basil, 1 - 1 1/2 cups egg noodles, 1-2 Tbls lemon juice. I also added some chopped celery and fresh chopped parsely. Yummy recipe, just needs some tweeking!

Sweet Corn Tomalito

Just like Chevys'! Perfect. I tried the microwave version mentioned by other reviewers: 7 minutes at 30% power, then 4 minutes at 100% power. The center was still goopy so I stirred it up and cooked it another minute at 30% power and it was just right. Would definitely make this again... so easy to make!!

Pasta Salad with Homemade Dressing

This is a very beautiful, very delicious salad! I didn't change a thing. It was a HIT at the baby shower I threw. Prep time was much longer than what it said because of all the chopping. Save some of the dressing for later just in case the salad dries out.

Amazing Pork Tenderloin in the Slow Cooker

My husband said this was the best pork of any kind that he's ever had. We absolutely loved it! And it was SO easy. I threw all the ingredients together in just a few minutes, cooked on low for 6 hours and it was wonderful. The meat just fell apart. I served it with veges and mashed potatoes. The only thing I changed was adding 1 Tbls of Worcestershire.

Mediterranean Greek Salad

This is absolutely the best Greek salad I've had outside of Greece! Refreshing and beautiful! Definitely use kalamata olives, though. I followed the advice of other reviewers and used just 1 Tbls. of the oil and added 1 Tbls. red wine vinegar.

Cream Puffs II

This was my first time making cream puffs, and I was quite disappointed. The recipe didn't make nearly as much as it said it did. I scooped out the middle, but left some (glad I did that - otherwise it would have been a tough, crisp shell). The filling was delicious (I made it the next day to put on waffles!!). The chocolate just kind of glopped on... I was hoping for more of a drizzle. I added some milk and a bit of vanilla to the chocolate, but it still left me wanting.

Cola Pot Roast II

Winter Fruit Salad with Lemon Poppyseed Dressing

Every family meal I go to, people ask me to bring this salad. It's delicious - sweet and refreshing. Beware of the onion (better to put too little than too much, it can be overpowering).

Lime Chicken Soft Tacos

This is a staple in our house! Everyone loves it and it's easy to fix. I always add more garlic (3-4 cloves... we love garlic!). I wait an extra 5 minutes or so before adding the green onions because I prefer them crunchier than wilted.

Fresh Fruit with Poppy Seed Dressing

The Poppyseed Dressing was delicious! It tasted sort of like a rainbow sherbert. Great salad to bring to a family event. I used half the banana and only half the dressing. Added one kiwi and one mango, also.

Blueberry Coffee Cake I

I made this for Easter brunch - my first coffee cake! Everyone LOVED it and my cousins told me I've inherited my mother's baking genes (Mom is known for her cooking). I'm not a fan of coffee cake, so that's the main reason I only gave it 4 stars. The only other thing keeping it from 5 stars is the streusel topping. When you make this recipe in a bundt pan, the topping ends up as the bottom when it's inverted. I thought this was a little strange, and it made the cake slide around on the plate a bit (my husband thought it was a sweet little surprise, though!). Changes I made: increased the milk and nearly doubled the bluberries as other reviewers suggested; mixed 1/2 of the topping into the berries ;I also increased the whole recipe by 1.5 to make a full bundt (SO glad I did that!!) which increased the cooking time to about 70-75 minutes. Mom was impressed which made me proud. I'd make it again, maybe with a springform next time...
