Lemonade Cake III

This is a big crowd pleaser, perfect for picnics and pot lucks. I make the following changes to keep with an old family recipe - make as a sheet cake - use powdered sugar for the glaze, not white granulated sugar, I use about 1&1/2 cups or more - add until you have a tasty and silky consistancy. - after you take out the cake crank the oven up to 400 degrees then put the glazed cake in for 5 mins. It make the glaze a little crunchy.

Easy Chicken Enchiladas

They are easy and GOOD! I used less cheese (about 1/2) because that's all I had and I liked it that way. I also substituted fresh chilis and added some fresh corn again that's what I had. I added a few tablespoons of oregano, too. The chicken I used was leftover BBQ chicken. I pulled off the skin (white and dark meat) so the BBQ sauce wasn't included but it did add a good smokey flavor. I shared these with friends and had recipe requests and compliments galore!

Cake Mix Cookies IV

These are probably the best cake mix cookies there are but they aren't really very good. Although my son (13) and his friends like them - I don't think they are for more discerning taste. He had fun makeing them and slathering frosting on half of them so they serve a purpose. They have a VERY processed taste (of course they do there from a box). One bite left a funky taste in my mouth.

Awesome Slow Cooker Pot Roast

Flavor of the gravy was great and easy to make. I used a tri tip cut and the meat was a little dry and flavorless. I'm going to try it with a different cut of meat. Chantrelle mushrooms are in season so I put some of those in late in the cooking process. I add a paper thin sliced sweet onion at the begining and that was good.

Lamb Chops with Balsamic Reduction

This was really good and fairly simple. The only thing I did differently was I fried the chops for about half the time and them put them on the grill for about a minute each side ... I like the grilled flavor and the crunch it added.

Chicken and Dumplings III

This is so easy and delicious. I sauteed some onion, carrots and celery and added that. I cooked the chicken in low sodium chicken broth. I also ladeled out some of the broth and added a tablespoon of flour to make a roux, it thickened the broth just a little. I also added some veggies I had in the fridge, green beans, peas. Everyone really liked it.

All Day Macaroni and Cheese

This is GREAT! I doubled it for a potluck and it was a hit. Not a drop left. A few changes I made: - I added a few scraps of fresh nutmeg. - I cooked the doubled recipe on high for one hour then low for 2.5 hours. - I added some grated parmessaen cheese to the mixture and on top.
