Pineapple Cranberry Chicken

Very good. Halved the recipe because I had 2 pounds of chicken. Cooked at 375 covered for 25 minutes, then uncovered at 425 for 15 minutes because I had to cook something else at the higher temp. Still turned out juicy, not overcooked at all. A good way to use up leftover cranberry sauce and a good weeknight recipe.

Eileen's Spicy Gingerbread Men

Turned out perfect. Used butter instead of margarine, and the batter was very easy to roll out after chilling; not gooey or dry at all. Used only a few pinches of the tops of whole cloves; otherwise, followed the recipe exactly.

Fabulously Sweet Pear Cake

Pureeing the pears made it very blah; recommend chopping up in a fine dice for better texture/pear flavor. Also, I left out some of the oil as per the reviews, and it was a little dry.

Are you sure it's 1/2 ounce of bitters? Because it was, uh, quite...bitter! So much so that I had to throw out the drink. And I'm not one who usually goes for sweet drinks. Maybe with a few drops of bitters?

Delicious, only the dough was too dry and hard to knead, even after adding 2 teaspoons of water...THEN I read the reviews! Definitely start with less flour, then you can add more if it's too wet.

Zucchini and Tomato Casserole

Unexpectedly fabulous!! Used about 1/2 tablespoon dried dill instead of fresh, and grated Parmesan instead of Romano. No salt needed because the cheese is salty enough. Wonderful!!!

Artichoke and Sun-dried Tomato Chicken

Giving 4 stars instead of 5 b/c I made substitutions. Instead of artichokes, I used a green bell pepper. Instead of "sun-dried tomato pesto", I used about 8 sun-dried tomatoes and about a quarter-cup of regular basil pesto. The sun-dried tomatoes added sweet/tangy notes, and the pesto had plenty of garlic and basil flavor...not bland at all, and I imagine that using artichokes would be even more flavorful. A keeper.

Goat Cheese Stuffed Tomatoes

Good flavor, but I'm so used to stuffed tomato filling having more weight...this was very soft/runny. I think next time I'll do what others have suggested and add rice or couscous. It would also be good in cherry tomatoes, where the filling would be proportioned to the tomato better.

Delicious. It was very sweet...may try using half the sugar next time. Oh, and I didn't stir it after 2 hours like the recipe said, and it still had a soft, scoopable texture.

Baked Fried Eggplant

This turned out great, and for a lot less work than frying as well as fewer calories. Changes: didn't have sour cream, so I used....gasp...Miracle Whip!!! Also, sliced thinly and turned heat up to 350. Thanks, this recipe is just what I was looking for.

Gazpacho I

The easiest and freshest of all the gazpacho recipes listed here. You don't need tomato juice like the other recipes, and I also skipped the tomato paste and olives. I added a spoonful of pesto for flavor and texture, but it would be equally good without. A keeper!
