Greek Pasta Salad with Shrimp, Tomatoes, Zucchini, Peppers, and Feta

This is amazing! I am so glad I took the time to try this recipe. I made it to bring to a potluck so I grilled up the veggies and assembled the salad before we left. I ate a large amount of it before I even left the house. I did use a combination of garlic and lemon flavoured olive oils in the dressing and it gave it even more zip. I'm thinking next time I might grill up some fresh shrimp and serve it on the side instead of in the salad. I will definitely be making this again.

Garlic Chicken with Orzo Noodles

I really liked this recipe but I have to confess I cheated. My local grocery store was out of orzo (all brands, if you can believe it) so I grabbed a box of rice pilaf to substitute, prepared it on the side and added it in after the chicken was cooked through. It was delicious and I will definitely make this again.

Massachusetts Straub Chili

I want to say this is a really great recipe but I made alot of changes to it. First I used a lb of ground turkey in place of the 1/2 lb of ground beef. I also added a sizable amount of chili powder and cumin, left out the italian seasoning, and added a package of chili seasoning. I left out the beef broth, I think it would have made it too soupy. I also used canned kidney beans. With all of these alterations, the recipe was awesome, my fiance and I both loved it.

Nanaimo Bars III

Being a transplanted native of British Columbia living in New Hampshire, I wanted to make something from back home for my office dessert day. These tasted absolutely fabulous but did not look as pretty as the ones I remember eating growing up. However this could simply be because of my own baking skills, maybe after a few more tries I will get it right. I too could not find custard powder in the grocery store although back in Canada it was always on the shelves. I will definitely make this again when I'm craving a taste of home. Thank you so much for the recipe, it brought back very fond memories.

Caramel Snack Mix

This mix is so good and sooo easy! I served it last week at my cookie swap party and everyone wanted the recipe. I am making another batch right now for the holidays, I am going to add some m&m's after it comes out of the oven just to see if that extra kick makes it even better.

Spinach and Red Pepper Couscous

This was actually pretty good, I was a little concerned about the vinegar because it smelled quite strong while I was cooking it, but it left a pretty mellow flavor. I did not have the raisins or spinach to put in this recipe but it worked and it tasted very light a subtley flavored. I will definitely makes this again.

Blueberry Oat Muffins

These were simply wonderful, a nice alternative to the fat trap muffins at the coffee shop. I did make giant muffins out of them so they required a little more cooking time, but they were fabulous. I really enjoyed the hint of citrus from the orange juice and the nuttiness of the oats.

Quick Italian Meatball Soup

This is one of our favorite soup recipes. It is incredibly easy, although a little time consuming because of the meatballs, but it makes such a wonderful pot of soup it is well worth the effort. I have made this recipe several times and it is easily adaptable. I always use seasoned bread crumbs instead of the wheat germ and add some garlic to the meatballs as well as the broth. I also use frozen spinach most of the time, chopped because my fiance doesn't like to admit he is eating spinach. I also use crushed tomatoes most of the time for a smoother soup. Served with a salad or a nice crusty bread this makes a wonderful light meal.

Blueberry Coffee Cake

This was sooo good! Very easy to make, I didn't adjust anything and it turned out perfect. Everyone thought it was delicious, one lady even said it was just like her mother's coffee cake. I will definitely be making this frequently on Sunday mornings.

Blueberry Coffee Cake I

I wish I had read all of the reviews on this recipe before I tried it. Obviously this recipe requires more milk and less flour. Mine is in the oven right now as written and it is hideous. I'm sure the recipe is yummy after the alterations are made but I am going to keep looking for a coffee cake recipe that I don't have to tweak.

Corn Chowder I

My boyfriend asked me to make a potato and corn chowder and after reading all of the recipes on this site I decided this looked the best. I did make a few minor adjustments though. I cooked the potatoes in chicken broth to give them more flavour. I also drained my bacon and only used a couple of tablespoons of the grease to cook the onion in. In an effort to cut back on the calories, I used the liquid that was left from the potatoes in place of 2 cups of the milk. (I also used 1% milk). Instead of creamed corn I used niblets, but I might use a combination of the two next time. I chose to keep the bacon on the side and add it to each individual bowl of soup so that it didn't get soggy. This turned out to be really good soup. It wasn't the thick rich soup I remember from my childhood but I'm sure it was much better for me.

Oriental Green Bean Salad

This is the closest to the restaurant version I have been able to find. It can be played with a little, I used Hoisin sauce instead of Oyster, because I had some in the fridge. I also used ground ginger instead of fresh and added a little more red pepper flakes. In an effort to make it more healthy, I pre-steamed the green beans slightly and dropped the oil amount to about a tsp. Yummy!

Hot Spinach and Artichoke Dip

this may be the best spinach artichoke dip I have made ... my only recommendation is to add the bacon to the top of the dip just before baking it, that way it won't get mushy in the dip ... this was a huge hit at Xmas this year.

Honey Ginger Shrimp

this is quite good but needs some tweaking ... I marinated the shrimp in the sauce ingredients before cooking it in the same sauce ... I've also tried it with a little orange juice added, to give it a little more flavour ... I serve it with steamed broccoli and a rice pilaf for a quick healthy meal.
