About this Cook
I grew up near Dallas, Texas which has a lot of great restaurants: BBQ, Tex-Mex, Chinese, Italian, Thai -- you name it! So I like everything, and I like it spicy! I grew up watching Justin Wilson, so I like Cajun cooking a lot.
My favorite things to cook
I like to make a seafood/okra Cajun style stew, a pot of pinto beans, a smoked brisket, baked BBQ chicken, grilled pork chops, linguini with clam sauce, chicken or shrimp alfredo, pizza, chocolate cake ... I just like to cook!
My favorite family cooking traditions
My mother made a really great Chicken Spaghetti and my father was a very fine cook who made the best Egg Rolls I've ever tasted anywhere.
My cooking triumphs
After screwing everything up for the first ten years, it finally just clicked with me somehow and it's almost like I can do no wrong now. Don't ever give up! Keep tasting and experimenting. Pay attention. Read a book called "The Chemistry of Cooking." I have a small triumph almost every evening!
My cooking tragedies
I decided to make my own giblet gravy one Thanksgiving, but I was so busy I left the giblets sitting out for hours and hours and gave my wife and myself a slight case of food poisoning. I also made the worst Pork Roast in all of history after my sister sent me this gourmet package that included a fennel-based pork rub. I love flavor, so I rubbed it on extra, extra thick and left it on -- it was horrible! The whole family gagged.

Chocolate Banana Cream Pie
For the ease and fool-proof nature of this pie, it is surprisingly good. Well deserving of the top rating.

Chewy Chocolate Chip Oatmeal Cookies
What can I say? I hardly changed a thing, just cut back a little on the salt because of what others said. I don't think it would have made any difference. Oh yeah, they need to cook a lot longer than 12 minutes, at least in my oven. But the results were across the board 5 STARS from the whole family!
