Black Bean and Salsa Soup

This was really good! I did add some cream, cilantro, fresh chopped jalapeno, cayenne pepper, and fresh squeezed lime to this. Glad I made a double batch b/c between 4 adults this was a big hit and went quick!

Easy and Delicious Chicken and Rice Casserole

This was pretty good but it was missing something.I added garlic, onions, parsley, broccoli, bacon, pepper,paprika, and bread crumbs. It came out good but bland. I think it might need some cayenne pepper (not much) to make it better. I'd definitely make this again though.

Lower Fat Fudge Brownies

These were rubbery and inedible. My BF who will eat *anything* won't eat these. (And I followed the recipe to a "T", no substitutions or anything.)

Quick Quiche

This was awesome. I did make some changes though. Used sliced cheese instead of shredded. Layered that on the bottom, then put the bacon crumbles. Added another light layer of cheese. Added a layer of lean honey ham (ripped into pieces). Added the egg mixture (used Southwestern Egg Beaters) and substituted onion powder for onions. Served with Sri Racha (kickin chicken) sauce. It was a hit!

Chunky Cheesecake Brownies

These are the best! Not too cakelike and just the right amount of chewy goodness to satisfy the brownie craving. I baked these for 40 minutes in an 8x8 pan at just a little under 350 (my oven's calibration is off) and they came out juuuuuust right.

Deep Dish Brownies

Excellent! I only put in 2 eggs, left out the baking powder, added 1/2 bag of Ghiradelli choc chips, and topped with cream cheese frosting. Irresistible!!!

Chocolate-Chunk and Pecan Cookies

These were pretty good. Seemed to have a more cake like texture rather than a cookie texture but that's ok. They weren't as sweet as I like my chocolate chip cookies but they will go great with hot cocoa!

These were great! I baked them at 350 for 30 minutes, then 325 for 20. I also added butterscotch and chocolate chips. These came out lightly flaky on top and fudgier on the bottom.

Chocolate Chocolate Chip Cookies I

These are fantabulous! I did alter the recipe a bit though: I used 1 cup white sugar and 1/2 cup lightly packed brown sugar. I also added 1 bag of Ghiradelli semi-sweet chips AND 1 bag of the Nestle Swirled chips (chocolate and caramel). They are gone as soon as I make them!!

October Apple Pie

Fabulous, fabulous, fabulous! This came out perfect. I used Mrs. Smith's pie crust instead of making my own and everyone raved over this pie. I did add a few more caramels than the recipe suggested.
