Pumpkin Smoothie

This was tasty and filling! It of course has a strong pumpkin flavor, which we love, but I think next time I'll try it with banana for some natural sweetness. I substituted honey and maple syrup instead of the brown sugar, and used pumpkin pie spice. I wanted to have it right away instead of waiting for the pumpkin to freeze, so I used room temperature canned pumpkin and added ice cubes. My 6-year-old loved it too!

Janet's Rich Banana Bread

The best!! Everyone loved this banana bread. I didn't have walnuts so I left those out and it was fine. I had 3 over-ripe bananas, so I used all of them- mashed. I also didn't use sour cream, I used plain Greek yogurt. I will never use another banana bread recipe in my life!

Baked Potato Salad

Very good. I didn't even wait overnight to serve it and it was very well received, however, the leftovers the next day were also delicious. I ran out of sour cream and needed a little more creaminess, so I added plain Greek yogurt, and no one could tell the difference. I also opted for fresh chopped green onions instead of the dried chives, as others mentioned.

Creamy Rice Pudding

very good! i never realized i would be able to make this dish, but i just followed the recipe exactly and it came out perfectly. i also was careful to follow the previous reviewers' advise and make sure the rice was cooked soft before mixing in the milk, sugar, etc.

Cheese and Broccoli Chicken Soup

This turned out very nice for me. I boiled the chicken first and shredded it first instead of cutting it in chunks, and also used 4 cans of chicken broth instead of the bullion. When it was time to add the thickening agent, I actually poured out some of the broth into the flour and butter and wisked that together separatly so there were no lumps. Then I added garlic salt and an extra cup of cheese. Excellent!!
