Mini Cheesecakes III

These are super easy and taste great! I am afraid to make cheesecake because it seems easy to ruin...and maybe I can put it off for a few more years because these are terrific! Like others I made supreme strawberry topping - yum! The graham crust is so yummy. Very good for guests.

Buttermilk Pancakes II

These were the most amazing pancakes ever! They were so easy and they turned out great - I followed the recipe exactly. My husband just came home from being overseas for a few months, and his one request was that I make pancakes for breakfast. I wanted them to turn out perfect, and these did! This is a large recipe, which I really liked.

This is so good and an easy way to use leftover chicken. My one year old loves it. I think it's good as written, but I usually add lemon pepper and garlic powder.

Grilled Sausage with Potatoes and Green Beans

This was absolutely delicious and so easy! I don't have a grill, so I just wrapped everything in the foil, put it in a big baking pan, and baked at 425 for 35 minutes, opening the top up for the last 10 minutes.

Chocolate Chex® Caramel Crunch

This is so delicious. I had a really hard time getting white chocolate to melt and drizzle easily. I suggest just adding M&Ms or white chocolate chips at the end, unless you are more talented than me. I added a handful of peanuts before the caramel glaze, which was delicious! If you want this slightly chewy rather than crunchy, add about a tbsp more of corn syrup.

Honey Mustard Grilled Chicken

This was fantastic! We just bought a grill for the first time, and I decided to try this recipe out - perfect flavor for grilled chicken! The chicken was extremely moist and the marinade was not overwhelming. I will make this again and again!

Roasted Vegetable Lasagna

This was just so delicious. It was a little watery, but that problem disappears once it's refrigerated and reheated. If I wasn't worried about my waistline, I would have probably used more mozzarella on top, but it was definitely still rich and filling enough for me when I made according to the directions. I used cottage cheese instead of ricotta and omitted the egg, but it turned out great.

Chantal's New York Cheesecake

Wow, thank you for helping me make an awesome cheesecake! This was the first one I have ever made, and it set perfectly without cracks. I doubled the crust so I would lots for the sides as well (used 1 1 1/2 cups crumbs, 1/4 cup butter, and 1/4 cup sugar for each batch of crust, as suggested by other reviewers). I greased the whole pan really well, used room temperature ingredients, tried to minimize mixing time, and used a water bath. I didn't have time to let it sit in the oven for 6 hours, but 1 1/2 hours worked well, and after sitting in the fridge overnight, this is the best cheesecake ever!!

Very cute idea and delicious! I baked mine for 20 minutes and they actually came out of the pan very easily! Takes a long time to make, but totally worth it for a special occasion.

Key Lime Pie VII

FANTASTIC! Sooooooo foolproof! I was going to make my husband his favorite dessert - cheesecake for his birthday, and he's changed his request to this pie! An awesome homemade graham cracker crust really makes a big difference too! Save time on juicing limes by buying the juice - still tastes awesome! I will make this over and over again!

Vinegar Based BBQ Sauce

It's not quite the BBQ sauce from our favorite Carolina BBQ restaurant, but it's the closest I've made at home! I used it in the crock pot to make pulled pork for sandwiches - delicious! I was a little scared by the tablespoon (!) of salt, but it really gave the pork great flavor, especially considering we're using it more for marinating/basting than to pour on top of a sandwich. Thanks!

Spinach Stuffed Chicken Breasts

Delicious and attractive! I added sauteed mushrooms and lemon juice to the stuffing. Uncovering the chicken for the last 10 minutes in the oven made the chicken tender but crispier on top. You could easily prepare this the night before and bake the next day.

BBQ Pork for Sandwiches

So easy and perfect for a crowd. On my first batch I made the mistake of tearing the pork apart while it was in the broth and letting it simmer for awhile. It came out with the consistency of wet newspaper. Second batch I did pull it apart until after draining - much better. I got tons of compliments on that one!
