Favorite Old Fashioned Gingerbread

I thought this was delicious. I doubled the spices and took it out of the oven 5 minutes early (usually they are more moist that way). I would try adding applesauce to give it more moisture. I see a lot of reviews that say the molasses taste is too strong. I tasted the cake right after baking and thought so too. But after I left it overnight, the flavor mellowed out and it's perfect! Using a bundt cake pan would probably make it even more attractive. Try it warmed up with whipped cream!

Mini Cheesecakes III

These are super easy and taste great! I am afraid to make cheesecake because it seems easy to ruin...and maybe I can put it off for a few more years because these are terrific! Like others I made supreme strawberry topping - yum! The graham crust is so yummy. Very good for guests.

Endive Pear Salad Bites With Maple Vinaigrette

I made this in the morning for a baby shower that was held in the evening. The salad kept well and transported well (I filled the endive leaves before transporting). Also, I used only about half of the dressing and mixed it in with the salad instead of drizzling it - turned out great. I made the following changes and was happy with them: used only 1/4 cup olive oil; mixed half blue cheese with half goat cheese to cut down on the strong blue cheese flavor. I think it was an attractive appetizer when arranged in a pretty way on a plate.

Melt-In-Your-Mouth Meat Loaf

Wow - this was AWESOME! It had so much flavor, and the sauce was amazing! I doubled the recipe and it was still done within 6 hours of cooking. Did leave out the mushrooms, but I'm sure they would have tasted great too. Also, I put it in the oven at 350 for 15 minutes after putting the sauce on just to dry it up a tiny bit. The only thing lacking slightly was the presentation because the loaf kind of spread out into the shape of the crock pot...but it tasted so good, I don't care!

Grilled Salmon I

After grilling, I brought the leftover marinade to a low boil on the stove and added cornstarch to make a thicker glaze that we had at the table for people to pour over their salmon. What a hit! Even people who didn't like salmon had seconds!

Apple Crunch Pie II

This is tasty, but it is so similar to apple crisp I might just forgo the crust next time and have that instead. The recipe is really enough to fill 2 pie shells. I would definitely cover the entire top of the pie with tin foil for at least some of the baking time, so the bottom crust can bake through and not burn the top.

Raspberry Almond Tart

The bottom crust had a great texture, and the almond and raspberry flavors go together really nicely. I thought leaving it overnight in the fridge enhanced the flavor a lot. Also didn't think the lemon-powdered sugar topping was necessary, as it didn't seem to add much flavor and just got messy. Watch it carefully because mine got burnt around the edges when I left it in the oven for 50 minutes.

Hoisin-Ginger Beef Skewers

Chocolate Chip Coffee Cake

This is very attractive and delicious. The combination of the butter and cream cheese make it very soft and moist. There weren't enough pecans to cover the whole cake, so they looked kind of scattered and weird. So I would add more pecans, or skip them all together and just put cinnamon and sugar on top. Also, my pecans burned a little, I think because there's no butter in the topping. I don't really know how to fix that problem. Overall, excellent, and everyone complimented me on how it looked and tasted.

Vinegar Based BBQ Sauce

It's not quite the BBQ sauce from our favorite Carolina BBQ restaurant, but it's the closest I've made at home! I used it in the crock pot to make pulled pork for sandwiches - delicious! I was a little scared by the tablespoon (!) of salt, but it really gave the pork great flavor, especially considering we're using it more for marinating/basting than to pour on top of a sandwich. Thanks!

Hamburger Soup I

Very good! I made the following changes so it is more like the soup my mom made when I was growing up: added 1 tbsp oregano, a bay leaf, and 1/4 tsp pepper. Added chopped potatoes and green beans. My husband loved it!

Pumpkin Pie Bars

This was a really delicious way to use pumpkin. I used a can of plain pumpkin for the middle instead of pumpkin pie filling, and I added 1/2 a cup of splenda, 2 tsp. pumpkin pie spice, 1 tsp. cinnamon, and 1/2 tsp. ground cloves, and it turned out great. Was the streusel topping supposed to be mushy? I would have liked more crunch, so would probably add pecans next time. As other reviewers noted, it needs to be baked about 70 minutes.

Chantal's New York Cheesecake

Wow, thank you for helping me make an awesome cheesecake! This was the first one I have ever made, and it set perfectly without cracks. I doubled the crust so I would lots for the sides as well (used 1 1 1/2 cups crumbs, 1/4 cup butter, and 1/4 cup sugar for each batch of crust, as suggested by other reviewers). I greased the whole pan really well, used room temperature ingredients, tried to minimize mixing time, and used a water bath. I didn't have time to let it sit in the oven for 6 hours, but 1 1/2 hours worked well, and after sitting in the fridge overnight, this is the best cheesecake ever!!

Roasted Vegetable Lasagna

This was just so delicious. It was a little watery, but that problem disappears once it's refrigerated and reheated. If I wasn't worried about my waistline, I would have probably used more mozzarella on top, but it was definitely still rich and filling enough for me when I made according to the directions. I used cottage cheese instead of ricotta and omitted the egg, but it turned out great.

Strawberry Dream Cake I

Maybe I didn't make this right, but I was not a fan at all! I baked it in a 9x13" pan, and baked it about 40 minutes, which made the top as brown as I could let it get without burning it. The inside was so moist it was wet, and extremely dense. The frosting did not hold its shape well. I would suggest using just whipped cream because the frosting is expensive. Maybe if I covered the top of the cake with tin foil while it was baking it could bake longer without browning the top too much.
