I have two young boys that are very picky eaters. I've been in the Army for almost seven years so I have to find a way to make a good dinner for to picky eaters in a very short amount of time.
My favorite things to cook
Well, I love cooking all kinds of things. My boyfriend is Mexican so I'm really trying to find some good AUTHENTIC mexican recipes. It's so nerve racking cooking Mexican food for someone from Mexico. My slow cooker has become my new best friend.
My favorite family cooking traditions
My family never really sat down and ate dinner. My mom never cooked and my dad always cooked the same things, mostly hamburger helper. I want to start some cooking traditions with my kids because my family never had any
My cooking triumphs
Too many to count. I never cooked growing up but having children gave me a reason to learn how to cook and I love cooking EVERYTHING

Chicken Enchilada Slow Cooker Soup
I made this tonight using a can of rotel and no chili powder. It came out great. I served it on top of corn bread and garnished with sour cream, cheese and green onions. Even my three year old ate it.

Mexican Style Shredded Pork
I love this recipe! I did add one 8 oz can of regular cream cheese spread and it came out even better. I use this recipe for my enchiladas or just serve it with tortillas and rice. LOVE IT!
