Apple-Raspberry Crisp

Too sweet if recipe is followed. Use 1/2 sugar with apples, then add sugar to the crisp mix, along with chopped walnuts. Extra raspberries work too. I cut butter in cold to the crumble mixture.

Blueberry Zucchini Bread

Delightful recipe! I made muffins and mini-muffins with this. Light, moist, yum! I used coconut oil and cut the sugar to 2 cups. 1 C brown and 1 C white/splenda mixed. VERY tasty!

Blueberry Nut Oat Bran Muffins

These taste a little too healthy for me. I'd add a bit more sugar and maybe even beat the eggwhites and fold them in to make the batter lighter. They are OK, but that's all.

Light Oat Bread

I followed recipe and made in oven. Only substitue was coconut oil instead of margerine. Bread turned out soft, tasty, and able to be sliced. Smelled wonderful while baking too!

Blueberry Coffee Cake

Watch out. This will be gone before you can say, "blueberry!" I make up some butter/brown suguar/cinnamon/walnut streusel for the top and used lite cream cheese. To die for!

Apple Puff Pancake

So delightful! Not too sweet, but sweet enough that I ate about six servings! Wow! So moist. If you like eggy pancakes, this is a great fluffy flavorful one! I sprinkled brown sugar lightly over the top. It didn't need anything on it. It reminded me a bit of my mom's "Impossible Pie" that forms its own crust while baking. This isn't quite a crust, but it gets thicker at the bottom of the pan which adds wonderful texture. I will make this regularly!

Cranberry Crumb Pie

This pie became a personal tradition of mine! It's rich and creamy, while the cranberry sauce adds a wonderful tartness and then it's topped off by a golden nutty crunch. I've made it probably 8 times and it aways turns out beautifully. A real crowd pleaser! I find it's even better when chilled overnight in the fridge.
