Bran Flax Muffins

Really, REALLY good! I made a few modifications but I loved them and my one-year-old gobbled one down too! Modifications to "healthify" a little: -subbed coconut oil for the canola oil -used 1/2 a cup of brown sugar only, then 1/8 c. maple syrup and 1/8 c. honey as sweetener--they are plenty sweet -used 1 c. unbleached white flour and 1/2 c. whole wheat flour Mine made 18 muffins even without the raisins and nuts to bulk it up. I did add a few tablespoons of sunflower seeds, which were a great addition!

Cheesy Italian Tortellini

This is so easy and REALLY REALLY good. I used 1 lb turkey Italian sausage and omitted the ground beef because I forgot to buy it. I am sure it makes it even better. Just delicious, was beautiful, thank you whoever invented this recipe!

Mediterranean Black Olive Bread

Somewhat labor intensive as bread-making is, but it turned out very well and tasty. I didn't think it was anything too special, but it looks very pretty and goes well with an Italian dinner.

Easy Chicken Coconut Curry

Maybe I am crazy, I am pretty sensitive to spicy dishes, but this was so spicy I could barely even eat it. I used broccoli instead of cauliflower and lite coconut milk, otherwise stayed with the recipe. My mouth was on fire. My husband did like it though.

Apple Walnut Salad with Cranberry Vinaigrette

I made this for Thanksgiving dinner this year and it was delicious. The dressing does have quite the onion bite but I liked it. I used canola oil instead of vegetable and next time I would use olive oil as I think it makes a better viniagrette. I also think it needed more oil, it was a very thick dressing. But alltogether really good and well received at the dinner table!

Grandma Ruth's Stuffing

I made this for Thanksgiving this year, it was wonderful! It was my first time making stuffing and this was a complete success. It makes a HUGE amount, probably enough to feed 15+ people. We only had 8 and it was still towering afterwards. I did omit the mushrooms and used fresh sage. I wasn't sure how long to cook it since we did it outside the bird, but I went for about 40 minutes, the first 20 with foil and the second 20 without. This worked well and the top was crispy but not burnt. Yum, yum, yum!!

Cardamom Chicken with Salt and Pepper Crust

This is the best baked chicken I have ever had. Absolutely amazing!!! I used two big chicken breasts (boneless, skinless) and let it marinate most of the day. Just heavenly. Easy, and great flavor.
