Cheesy Polenta

Reviewed: Apr. 13, 2006
I changed the recipe a bit and it turned out great. I cut the milk in half and replaced it with heavy cream, and then instead of 4oz of cheddar I split that up between asiago and parmesan cheeses. I did add a bit more polenta so it would firm up so I could grill it. The grill gave it a great extra flavor boost.

I couldn't resist adding some heat to it so I added a jalapeno, dried chili peppers, and a touch of chili powder. I also used traded out some of the onions for bell peppers.

Pretty boring soup until I added garlic, celery, heavy cream and swiss cheese. Almost one of my favorites now.

Roasted Butternut Squash, Olive and Parmesan Risotto

Reviewed: Nov. 15, 2005
I left out the olives but kept the pimientos and grilled the squash instead of roasting it. It turned out really good.
