Bread Pudding II

Tasty. I used 2 different types of leftover white buns and some multigrain bread that I pulled out of the freezer. I soaked the raisins in 1/4 cup of Amaretto until the raisins plumped up. Used half and half cream, Used only 1/2 cup of brown sugar (no white sugar), perhaps next time I'll a bit of maple syrup. Used 2 large and 2 small eggs. Doubled cinnamon and added nutmeg. Added chopped pecans. Let casserole stand for 30+ mins before baking to allow the liquids to absorb. For me, 1/2 cup of brown sugar is plenty since the 1/4 cup of Amaretto is sweet. Next time I will use 4 large eggs and some extra milk/cream since the mixed bread out of the freezer is pretty dry. Did not use melted butter on top since using half and half cream... One downfall was the top didn't brown and crisp up.

Italian Baked Cannelloni

This was apparently quite good... I didn't taste it but my meat lover friends enjoyed it. I browned 1/2 Italian sausage and 1/2 extra lean ground beef in 2 tbsp of olive oil. Only used 1 cup of cubed mozza. The sauce I added orange bell peppers, carrots, and garlic. I also added Onion and Garlic Classico tomato sauce to thicken it up. Used Oven Ready Cannelloni tubes!!!

Absolutely the BEST Rich and Creamy Blue Cheese Dressing Ever!

Very good even though I didn't have sour cream. Instead used in total 4 tbsps of light mayo plus I also added one drop of worcestershire sauce for a lil extra zip!

Chocolate Macaroons I

Next time I'll use unsweetened coconut, 1 1/4 cups of choc chips (maybe even dark choc) and about 1/3 cup of sugar. I used a teaspoon to scoop and another teaspoon to drop onto pan so no mess. To get your egg whites to peak, use a cold and super clean metal mixing bowl. I put my bowl and beaters in the fridge to chill before using. The bowl cannot have any oil reside on it otherwise it will affect the egg whites.
