Heavenly Cookies!
So fun and So yum!
Soul Food!
About this Cook
My favorite things to cook
Grilled mushrooms and onions. Italian food. Mexican food. Italian wedding soup (revamped-if you dice carrots and water chesnuts fort hat soup it is absolutely fab!!!). Chicken (never dark meat and never fried) Chicken and dumplings, salads with all sorts of delicious things in them. And I can make up a mean salmon steak!
My favorite family cooking traditions
We have a chocolate cookie recipe that is kind of a family tradition (I got it from my mom and probably she got it from hers). She made that about once a year and it was a rare thing so was so special to us as kids. I love to let my kids cook or cook with them. We traditionally eat Italian or Americanized versions of Mexican. I have even been known to cross the two. You know that if you put taco seasoning in spaghetti sauce it's very yummy? Of course, I like salty foods anyway.
My cooking triumphs
Chicken and dumplings, meatloaf, meatballs, Italian style soups, mexican.
My cooking tragedies
There are many. Back in the day my boyfriends mom gave us "steak" and we went for a picnic day in the beautiful mountains and then went to grill the "steak". Well it was bubbly and green on the inside. (Yeah no joke) But that one wasn't my fault. And when I was about 19 and newly married we were very poor and I tried to get a little too creative. I pureed pumpkin, added some protien powder and poured it over spagetti noodles. (LMAO I do not recomend this) My mother, needless to say never cooked and definitely never taught me how. Since these horrors and a few others at the age of 17 to 19 I have learned a lot. These stories never get old and about once a year I tell them to my family and we all laugh a good laugh over it.

Rosemary Shortbread Cookies
I have had a favorite cookie recipe since I was a child, but yesterday me and my girls made these cookies and that once favorite cookie has been replaced by these cookies. My best tip is DO NOT OVERBAKE. Don't wait for the edges to get too brown. We liked them on the much paler side. So beautiful, unique, and if you love rosemary and shortbread, so perfect!!!! I made another kind of cookie after this and though I am sure the cookie was absolutely fab it greatly paled in comparison to these. It is refreshing to try something different and these are a pleaser! Do not change the recipe at all because it is perfect. Although I must confess, over time, I would like to expirement with a few other herbs. A good cookie if you want to impress or have friends for a tea party. I felt like the workds best cookie maker when I made these! Approved by kids dads grandpas and moms and soon to be grandmas I am sure. Something I notice with these that was unlike cookies I have had in the past, I could taste each seperate taste individually-butter, salt, rosemary and a some sugar sweetness, and then I could taste them together at the same time. That, to me, was kind of interesting. Also they are very rich! I can eat cookies, believe me, but I can only eat 1 or 2 of these at a time, and trust me, that's fine. Like good dark chocolate, just a little is enough to satisfy because the quality is so good. I got 48 round cookie from this batch.

Italian Wedding Soup I
I was not too concerned with the tradition this recipe only in that I don't mind tweaking it a bit. I like to dice up baby carrots and water chesnuts to enrich the color, flavor and texture. Although it is not at all nesscecary is sure is great to add those. This is a favorite for me to make and to eat. SOOOOO yummy!!!! Satisfying to make serve and eat. Highest rating.

Chicken and Dumplings III
My family loves this EASY and delicious meal and fell in love with it the first time I used it. That was a long time ago but I still get requests for it from my family. So easy you might even feel a little guilty. Fast food meets home cooking. For health reasons I would not normally use canned biscuits but this is great when you're too darn tired or pressed for time. It really is scrumptious!!!!
