Pumpkin Spice Muffins

Not too impressed. I was diagnosed with gestational diabetes recently and was looking for a good snack recipe. The muffins were really sticky (I may not have baked them for long enough) and although they had enough flavor, I had to throw most of the batch away a few days later because they went moldy! Kind of a waste.

Oatmeal Raisin Cookies I

Awesome cookies! Made a few changes as I wanted an applesauce/oatmeal cookie. I used 1/2 c. butter and 1/2 c. applesauce; eliminated white sugar and used 1 c. of brown; 3/4 c. unbleached flour and 3/4 c. whole wheat; 1 t. of cinnamon and 1/2 t. nutmeg; soaked raisins in warm water while mixing the batter. Baked for 10 minutes at 350 on parchment paper. They turned out extremely soft and moist, didn't spread very much, which I like. I didn't taste the applesauce very much, but I wouldn't increase it without adding more flour. Not sure what that would do to the texture. All in all, a very yummy cookie! I might substitute chocolate chips next time for the raisins.

No-Sugar-Added Blueberry and Banana Wheat Muffins

These were surprisingly good! I did change a few things based on the other reviews. I wanted something nonfat, so I subbed my homemade no sugar added cinnamon applesauce for the oil. I used 1 c whole wheat flour and 1 c all purpose flour. To add some spice, I simmered the water with 1 t. cinnamon, 1/2 t each nutmeg and ground cloves for several minutes. Finally I added just 2 Tbs honey. They rose really welll, and were done perfectly! My 2 year old loved them! I did 1 and 1/2 the recipe and got a full 2 dozen.

Blueberry Streusel Muffins

these are amazing! i made them exactly as the recipe said, only i used brown sugar instead of white. they came out wonderfully! my husband and son said they were the best they ever tasted. it does only make about a dozen, so next time i'll probably double it, especially if i'm making them for a potluck or when family comes over. they were also fairly easy for my 10 year old to make, a good project to keep him busy on a rainy summer day!

Fresh Strawberry Pie I

this pie was AWFUL!! i made it for Easter for my family, and it never set up even though it was in the fridge for 24 hrs. i followed the recipe exactly except i sliced the strawberries. when i took it out of the fridge to cut and serve, the whole thing looked liked mush. it was so soupy i was embarrased to serve it. i had to put it in bowls and use spoons. i would never make this pie again or recommend it to someone else.
