Easy Tomato and Eggplant Soup

very easy. i added butter sauted onions, a tablespoon of minced garlic and a tablespoon of ginger paste to give it some spicy depth. served with some bread on a cool november evening it was delicous. with less broth it could be a great pasta sauce, i think. i served it to the husband as a low calorie but high fiber meal for his new low carb diet and he really liked it. thanks for sharing, its a keeper!

Fish in Foil

Cuban Beef Stew

Very good and while it looks intimidating its actually pretty easy. I skipped the potatoes and served this over rice with a loaf of crusty bread. I used up the last of our summer tomatoes which I added at the very end. It was delicious! Try it!

Citrus Turkey Brine

So easy! Thanks for sharing! I was wacky and this Easter we served turkey. Living in Southern CA our family has several citrus trees - oranges & lemons - so I wanted to incorporate that into this springtime meal. Well this was perfect! I loved seeing the chagrin on my mother-in-laws face when she had to admit my turkey was delicious! It was juicy, flavorful and fresh tasting!

Pollo con Nopales (Chicken and Cactus)

Good & easy recipe. As So. California residents my mother grows cactus aka Nopales in her yard & she harvests this "green meat" throughout the year. As kids we grew up on it. Thanks for sharing with my additions it was a hearty meal that got rave reviews. I served it corn tortillas, a side of rice and limes. My edits: I added tablespoon of chicken bouillon, garlic and a big chunky onion.

Oven Roasted Potatoes

Awesome Slow Cooker Pot Roast

Great recipe! Thanks for sharing this! I'd never made pot roast before so this was easy for me to "try out" and now it'll be a keeper - my husband loved it. A few things I did - 1) I added a tablespoon of minced garlic and crushed ginger - but that's because we like some spiciness to our meats and 2) I added to teaspoons of flour to thicken the gravy. Overall this was great - its a keeper & recommended!

REAL Homemade Pumpkin Pie

I always buy an extra pumpkin so that I can make "fresh" pies before Halloween. This was different than my usual boil method & my boyfriend really enjoyed it! Thanks for sharing!
