Oven Roasted Red Potatoes

These were so good and so easy! I made them for Thanksgiving dinner and my brother insisted I make them again the very next night. Make sure you stir them around about half-way through the cooking.

Double Crust Bean Pie

This was great, though I did make some major changes. I used roasted red peppers in place of the other peppers, mainly because I'm not a big fan of the others. I also used twice the salsa (2/3 c.) and 2 cups of extra-sharp cheddar. My guests loved it. I would certainly make this again.

Crustless Spinach Quiche

I followed this recipe almost exactly, just adding a little garlic to the onion saute. It was great! All my guests loved it. I was tempted to substitute a different cheese because so many others did and I wasn't familiar with Muenster; but I didn't and I'm glad. Muenster is not the strong-flavored cheese I thought it was. I might have been thinking of Limburger or something. Oh, and it was SO easy! I will make this again, definitely!

Chicken and Sun-Dried Tomato Bruschetta

Of all the recipes I've made so far (mostly from Allrecipes.com), this is clearly my dinner guests' favorite. I tear apart a pre-cooked rotisserie chicken warm from the supermarket instead of preparing the chicken in the way specified in the recipe, but otherwise follow the recipe pretty closely. Still having trouble with the toast part, though. Sometimes I just serve it on untoasted bread.

Butternut Squash Soup

This is one of my favorite recipes of any type. This soup was SO good! I followed the recipe exactly, but I would do 2 things differently next time: (1) As recommended by many others, I would cut the cream cheese in half; and (2) I will try roasting in the oven rather than trying to cut it first and then cook it on the stovetop from raw.
