Green Pea and Mint Soup

We made a double batch of this soup for an appetizer for my parents-in-law and grandparents-in-law, and uncle. Everybody loved it and asked for the recipe.

Amazing Pecan Coffee Cake

Really good recipe. I made it for our Bible Study, and ended up emailing a link to it to one of the women that evening. I didn't have sour cream, but successfully substituted plain yogurt. Also, I added almond extract, like I always do, and it was fantastic. -Also, the crunchy topping was very satisfying!

Barbeque Pork Two Ways

Since we made this recipe, we've been enjoying barbeque pork sandwiches for dinner, three nights in a row now! (How quickly college makes you appreciate leftovers...) I replaced 2/3 of the ketchup with barbeque sauce. Also, my batch was very watery about 2 hours before we were to eat, so I took the lid of my crock pot and it evaporated nicely to become thick and delicious.

Apricot Bars II

I cut all the ingredients in half but those for the apricot filling. I also added 1 tsp of almond extract to the oatmeal/flour mixture. With these changes, it was delicious! My husband and I have been eating giant squares of apricot bars every night since we made it.

Artichoke Spinach Lasagna

Delicous, extremely aromatic, full of flavor. I'll definitely make this one again when we have guests (or when we don't... ) Adendum: We made it when we had BOTH sets of parents over for Mother's day; quite a success.

Curried Apple and Leek Soup

Though I'm not usually one for sour things, this soup is really complex and, when paired with a nice bottle of sweet apple wine, it was awesome!

Berry Soup

This is a really nice change of pace. I especially think the cold fruit "soup" would be great on hot summer mornings. I topped it with toasted, mixed nuts and a little cream.

Pumpkin Bread

I made this recipe with King Arthur Gluten-Free Multi-Purpose Flour, and rice milk instead of dairy. (I'm nursing our 3-month-old daughter, and taking dairy out of my diet cured her colic, which probably can safely be called lactose or cow milk intolerance.) I also adjusted the spices to my personal tastes. It worked very well and got rave reviews! My personal adjustments: 1 tbsp cinnamon 1 tbsp nutmeg 1/2 tsp cloves 1/2 tsp allspice

Brown Sugar Banana Nut Bread I

This was a rich, flavorful banana nut bread. I don't like my banana bread to be bland; after trying a few of the other recipes on this website, I've settled on this one and won't search anymore! I like to sprinkle sugar on top of the batter before I stick it in the oven to make a sweet topping.
