Creamy Potato and Leek Soup

Grilled Mediterranean Vegetable Sandwich

Loved the sandwich! Used pre-packaged sun roasted red peppers instead of fresh ones and omited the mayo and maked a mixture of herbs, 1 clove of fresh crushed garlic and a little bit of olive oil to brush on both sides of the bread before placing the veggies on the sandwich. I also added a slice of mozarella cheese to each sandwich.

Red Bell Pepper Coulis

This was great! As recommended, I added 3 cloves of garlic and did not have sour cream so used dairy cream instead and it was wondeful! I served over white fish and it was a big hit at dinner last night.

I think this would have been better if i had remembered to drain the beans before adding them to the pot..it was a bit too thick..i also added red wine as suggested by others which gave it a nice flavor.

Ann's Shrimp Etouffee

A bit more time consuming than i had originally planned, but very good. I changed things a bit-adding half a can of chopped tomatoes to the onions, celery mix. Also cut the water in half and added a bit of white wine. And most importantly, instead of using butter, i used olive oil instead(about 4 tablespoons). I thought it tasted great and with a Lot less fat!

Tomato Vodka Sauce

I have never had Vodka Sauce before, but enjoyed this recipe. Added garlic to the onions and just before tossing with the pasta, added some already cooked shrimp for a little something extra...I think next time I will try it with bacon.

Shrimp and Asparagus

Not sure what i missed with this recipe, but i was expecting more with the great reviews it has recieved. I enjoyed the combination with the mushrooms,shrimp,etc. but think the past was too heavy with the vegtables. I did not put in a whole cup of butter as it seemed too much to me, but maybe that is what you need for the flavor? I dont think i will be making this one again.

Classic Cuban Midnight (Medianoche) Sandwich

I love making these sandwitches as they are easy and can be combined with whatever you have on hand. I would recommend using olive oil instead of butter as well.

Spinach-Stuffed Salmon Fillets

I loved this recipe! Thought the flavor was excelent. I did however have to change a few things due to the contents of my frig. I cut thinly, half an onion and sauted it with 3 cloves of garlic. When that was finished, I added the spinach and then some roasted peppers as i did not have pesto or tomatoes. In the baking dish, instead of using cooking spray, added a few drops of olive oil and a splash of white wine, mixed it together and added the salmon and spinach filling. The salmon took longer than expected...about 20 minutes and at the end, i realized that where i had placed the spinach, it was not cooking through so i had to remove the spinach, let it cook a little longer and then put it back together on the plate....all in all a good staple recipe.

Pasta Carbonara I

The flavor was not bad. I added half an onion and 2 cloves of garlic(chopped finely) to the mix to give it a bit more flavor. The only thing is, it took me a bit longer to cook than i had planned...almost an hour!!!! im not sure if im just a slow cook or the recipe??!?!!??!
