Yummy, I made this w/fresh herbs, more lomen juice, no garlic salt, and no mint (didn't have any) and marinated chicken breast pieces for 48 hours. Really good, and much healthier then the bottled kind. Trying it again this weekend and sticking closer to the original recipe.

Easy Batter Fruit Cobbler

I tried this with fresh apricots and blackberries. the bottom and middle didn't set or cook through, though the corners were a dark brown. Tasted ok. I will try this again before I give up on it, but with different, or less fruit.

Ricotta Cookies III

Wonderful little cookies! I used my own lemon icing for these, but followed this cookie recipe exactly except that they baked for 13 mins, and they turned out wonderful! It made 120 small cookies, so make sure you have some time!

Mediterranean Kale

I used the juice of one lemon, plus some zest, 1 clove of garlic grated on my microplane, and no additional salt as the soy sauce has plenty. Very tasty! I will make this again, it's easy and a great way to get more of this supperfood into my diet!

Carrot Cake III

Thank you for a great recipe! Sorry about the rating with a lot of changes, but they were successful, so I wanted to let others know. I needed to have my (carrot) cake, and eat it, too! I cut the oil in half and added 3/4 c crush pinapplee, drained. I reduced the sugar to 1 1/2 cups, and I used "white" whole wheat flour. Added a little fresh nutmeg and walnuts, might do raisins next time. Added a couple of minutes to the bake time and it was still moist. This was great by itself, and w/crean cheese frosting. Everyone loved it!

Chicken Marsala Florentine

I agree with another reviewer - More mushrooms and spinach, less butter and Marsala (1/2 cup each) That's what I did the second time, and with those adjustments it's 5+stars! I had never made chicken Marsala so I can't compair it to other recipes, but this is on my list of "Foods I can make that taste like groumet restaurant fare"

This turned out tasty , smells wonderful and looks great. I used half whole wheat flour, added 1/2 a cup of brown sugar, and two extra egg yolks. Then I used an egg wash and baked for 20 minutes uncovered then another 10 minutes loosely covered in foil. It's a little dry, next time I am going to add a bit more salt and oil, 1 cup of honey (no brown sugar), and bake it for 25 minutes uncovered to tweak it, but it's really good now anyway:)

Cinnamon-Roasted Almonds

Here's what I did... first I roasted 1lb of whole raw almonds (about 3c) in a 350 oven for 10 min., stirring once. Then I mixed 1 egg white, 1 Tbsp dark rum, 1/2 c powdered sugar, a sprinkling of ground ginger, a sprinkling of ground cloves, 1 tsp ground cinnamon, several grates of whole nutmeg, and many grates of cinnamon stick. I coated the hot nuts, adding a good pinch of salt, then threw them back in the oven (at 250) and stirred them every 15 min for 1 hr15min. This resulted in a light coating that was slightly sweet and flavorful. This is perfect for my tastes, but if you want more of a candy-type treat I would go with doubling all the ingredients except the almonds.

Curry Pasta Salad

It was 4 star tasty, but i spent a day and a half trying to get the consistency right. I would recommend trying it at home, with extra ingredients on hand, in your spare time. I wanted it for a party the next day and was disappointed with the initial results. It definably needs lots more of the sauce, but how much more depends on your tastes. I found it kinda dry even with the extra sauce, but on top of lettuce and with a few sliced grapes it was really good.

Spanish Slaw

Yum! I used white and balsamic vinegars, 1/4 tsp celery seed in place of the celary salt, and no pimentos, since I was making it last minute and that's what I had on hand. It turned out great, I thing I will try it on a spring salad next time (with goat cheese and dried cherries, mmm...)

Golden Bread Pudding

Definately LESS WATER!!! I doubled the recipe, then only added 4 cups and it turned out great! Make sure you watch it for cooking time, mine took a little longer then I expected, even after adding time because it was doubled. It should look slightty wet with the edges brown. I also used reduced-carb bread and egg substitute and it was yummy!

Rum or Bourbon Balls

I made these with brandy and chopped raisins soaked in brandy. The flavor was very good and they were popular at my holiday party. The next time i make them I will use a lesser amount of powdered sugar in place of the regular sugar as the texture remained gritty even after they rippened for a week.
