Grilled Fish Tacos with Chipotle-Lime Dressing
This has become a regular in our household! I have made it countless times. Don't be afraid of the long list of ingredients, it's still easy. If I don't have fresh limes I just use bottle juice (gasp!) and no zest and it still comes out great! My picky 4 and 7 year olds love it and one even had 3 servings! We serve it with the sauce, cheese, grated cabbage, avocado, olives, limes, jalepenos and red or green salsa. We never use all the sauce, so I'd say to half that and double the fish if you want leftovers.

Zucchini Fritters with Fresh Mozzarella and Tomato
I love this recipe! It is so delicious. I especially love it with a little goat cheese spread on the fritter and topped with a fresh home grown tomato! I have made them twice so far. I shredded the zucchini and let it sit in a colander on paper towels to drain off some excess moisture while I assembled the other ingredients. Both times I used 1/2 Whole Wheat White flour and 1/2 AP Flour. The second time I baked them in the oven at 425 for 7 mins, flipped them and cooked for another 7 mins. Still delicious and healthier. They also toast up real well as leftovers!

Pork Chile Rojo (Pulled Pork with Red Chile Sauce)
Loved it! Made some substitutions (due to ingredients onhand), so it was more like Pork Chile Verde, but still delicioso! Thank you.
