Chicken Katsu

Reviewed: Oct. 17, 2011
This was really good! I made just as written except I did sprinkle the chicken with curry powder as well. Definitely a keeper!

Tater Tot Casserole

Reviewed: Feb. 14, 2011
This was really good and very easy! I was looking for something beyond just the regular tater tot casserole I had in my cookbook and the Worcestershire sauce and ketchup helped to add some needed flavor. The only thing I did different was put a layer of tater tots on the bottom, then the meat mixture, and then more tots on top. My 5 yr old had two helpings!

Jen's Heavenly Egg Salad

Reviewed: Apr. 11, 2010
Really good and a step up from your normal egg salad recipe. Followed exactly except that I did add some celery and paprika (didn't use green onions, just regular ones). I will definitely make this again!

Breaded Chicken Fingers

Reviewed: Apr. 6, 2010
Really good! Moist and crunchy. Next time I will try and double bread since I like a little bit more coating. I didn't have any buttermilk but I added 1 Tsp vinegar and then added milk till I had one cup. Will definitely make again!

Ham and Cheese Bowties

Reviewed: Mar. 8, 2010
This was excellent! Even my 4 yr old gobbled it all down. I did make a few changes. Per others' suggestions, I increased the milk and that made it more creamy. I used Colby jack cheese and added frozen broccoli to the mixture as well. Used Romano instead of Parmesan cheese (since that is what I had). I never noticed the dish to be "garlicky" so I think that the amount called for was just the right amount. Definitely a keeper!

Sweet and Sour Meatballs II

Reviewed: Mar. 5, 2010
This recipe was really good but the best that I have had. I used frozen meatballs for easier preparation but I think the next time I am going to try the handmade ones. I did add some frozen peas and carrots (suggested by another reviewer) to add some vegetables and served over white rice. Will definitely be added to my recipe box!

Vanilla Crepes

Reviewed: Mar. 5, 2010
WOW! These were really good! The vanilla is such nice addition. I totally thought I was making waffle cones in my kitchen! I followed others' suggestions and used 2 cups of milk and cut the melted butter to 3 1/2 tsps. My four year old gobbled these up :)

Tara's Sweet and Chunky Chicken Salad

Reviewed: Feb. 24, 2010
I just love this chicken salad!! It is great on croissants or eaten in a bowl like a salad. A few things I changed because of what I had on hand. Instead of the canned chunk chicken, I just use regular boiled chicken that I chop into pieces. Also, instead of sunflower seeds, I have used browned almond slivers. Don't forget to add some salt and pepper (to taste) since the chicken won't have any seasonings.

Stuffed French Toast II

Reviewed: Feb. 5, 2010
This was so, so good!! I used thin slices of french bread instead of normal bread. The only thing I would do differently is use vanilla instead of almond extract since my 4 yr old didn't care for the smell.

Three Cheese Manicotti II

Reviewed: Feb. 4, 2010
Really liked this and it was fairly easy to prepare. Next time I will just boil the noodles instead of letting them soak since I like my noodles to be fairly soft. Used cottage cheese instead of ricotta and Romano cheese instead of Parmesan. Also halved the basil as suggested. Served with french bread and a salad and even my 4 yr old gobbled up his dinner!

Cheddar Bay Biscuits

Reviewed: Feb. 2, 2010
These are such good biscuits!! Pretty close to the ones served at Red Lobster but I can make them at home instead of having to buy them. A couple of things I have done differently based on suggestions from reviewers is that I double the cheese, use whole or 2% milk, and I include the seasonings in the batter as well as in the melted butter. Once you have brushed the biscuits with the butter, bake a little longer in the oven and they come out golden and crispy!

These nachos are great as either an entree or appetizer. They come out really good and crispy as well.

Aussie Chicken

Reviewed: Feb. 2, 2010
The only reason I am giving this recipe a 4 instead of a 5 is that it is really time consuming to make! Definitely something that you want to make ahead as much as possible (not at 6pm when everyone is HUNGRY!). It is worth the effort in the end and does taste a lot like a certain dish at a certain steak place.

Weeknight Chicken Cordon Bleu

Reviewed: Feb. 2, 2010
I have made this a few times now and my husband just RAVES over it! One suggestion is make sure that you pound the chicken EXTRA thin as this helps when you have to roll them up. Definitely a keeper!

Indian Chicken Curry II

Reviewed: Feb. 2, 2010
I really, really liked this! Fairly easy to make for an ethnic dish and let's me enjoy some Indian cooking at home. Make sure to serve with Jasmine or Basmati rice since plain white rice won't be the same. Great the next day as leftovers too!

I sort of cheated and used already prepared meatballs for I did like the sauce especially the nutmeg! Was worth making and is part of my recipe box.

Golden Potato Soup

Reviewed: Feb. 2, 2010
Really good soup and relatively easy. Next time I will add a little bit more milk to the cheese sauce since it was a little to thick. Served in bread bowls and everyone loved it!

Red Broccoli Salad

Reviewed: Feb. 2, 2010
I have been looking for a broccoli salad recipe for awhile and stumbled across this one. I have made this salad a few times and everyone has RAVED about it!! There is a lot of prep time involved but soo worth it! I haven't used maple bacon yet (hard to find) but regular bacon has worked just fine.
