Sweet Potato Pie I

Hands down the best sweet potato concoction I've ever had. Not too sweet, and it is so incredibly light in the mouth. Rave reviews from the whole family.

Salsa Chicken

I had winged a chicken with salsa recipe before but it turned out bland. The taco seasoning adds a very good amount of tasty goodness to it all. Definitely a keeper of a recipe, and SO easy.

Spanish Rice II

Very easy to make, and tasty despite my doubling the rice and forgetting to double the canned tomatoes. I did use chicken broth in place of water. Will have to make it again, properly, next time :)

Pork Roast with Thyme

Stellar taste, smell.. I added more garlic than was called for. This was good coming out of the oven and still great as leftovers. A definite keeper.

Cranberry Pork Chops I

The recipe as-is was only OK according to my tastebuds. Mine turned out to not really have much of a punch of flavor. I might try this with dried cranberries but I don't know that I'll be trying this recipe again anytime soon. I get better results with pork chops using other recipes.

Broiled Tilapia Parmesan

I was out of onion powder, but the sauce was still very good. It definitely gives an extra something to the somewhat bland tilapia. We had this with rice but I feel that something was missing. Will try this next time with the Orzo recipe mentioned in another review here.

No Bake Cookies III

These are fabulous. My grocery store sells choc-PB no-bake cookies at about $4 for a dozen. I got a lot more cookies for a lot less out of this recipe, and it tastes better, to boot. I stirred in the PB first before adding the oats at the end. That helped make sure that I didn't get PB clumps. Hubby is chowing these down, and he doesn't normally have a sweet tooth.

Little Meat Loaves

This came out very moist despite not being covered in the oven, and the sauce was delectable. I threw out my old meatloaf recipe and replaced it with this one. A raving hit with the whole family and an absolute winner all around.

Christmas Breakfast Sausage Casserole

I enjoyed this recipe but hubby said it felt like something was missing. I think next time I'll try adding broccoli or green peppers or something else that might give it some extra texture. I also think next time I'll bake this in a 8x8 instead of a 9x13.. the latter made it spread out a little too thinly for my liking.

Cantonese Dinner

I think I brutalized the recipe but it appeared to still have turned out delicious. I didn't realize I had run out of tomato sauce, so I substituted with 2 oz tomato paste + 6 oz water + silent prayer. I also added broccoli, changed the onion bit to half an onion instead and added a handful or so of a frozen onion + green peppers + red peppers combination I had in the freezer. Everything played well together and I loved the results. I had been afraid that there might be a vinegary taste but it wasn't detectable at all. I'm almost afraid to try it with tomato sauce now! Cantonese? No. Yummy? Yes.

Italian-Style Shredded Beef

I didn't really find this very different in overall taste from a basic slow-cooker pot roast or stew-type recipe, except there are no vegetables in this one. It was decent, not much to rave about although I did like the touch of provolone on kaiser.
