Brown Rice Pudding

Reviewed: Sep. 20, 2011
I wanted to make this because I was spending waaay too much on store-bought rice pudding to take in my lunch; this was amazing! I made it with one 12 oz can of evaporated milk instead of half & half, omitted the raisins and forgot the cinnamon, but it was AMAZING. Totally worth scrubbing the scorched bits off the bottom of my saucepan; I am never buying rice pudding again!

Ranch Style Chicken | The Pioneer Woman Cooks | Ree Drummond

Delicious! I was afraid the marinade would make the chicken taste mustardy, but it was just slightly sweet and very moist.

Easy Slow Cooker French Dip

Reviewed: Dec. 26, 2010
I made this exactly as listed and it was phenomenal. I could still smell the beer in the au jus, but I couldn't taste it. The leftovers lasted forever with just my husband and I. Great recipe.

Meat-Lover's Slow Cooker Spaghetti Sauce

Reviewed: Oct. 13, 2010
This was good; I used a bit more sausage than it called for, so it was a bit more sausagey than I'd like, but that was my own fault. I'm also not a fan of big stewed tomato chunks; next time I'll probably substitute extra diced tomatoes for the stewed. Overall, very flavorful, and I liked knowing what went into my sauce. Leftovers made great lasagna

Easy Fruit Cobbler

Reviewed: Oct. 13, 2010
I made this with fresh peaches and also with canned. The fresh peaches got a little dried out, but it was really good both times. The addition of ice cream pushes it to 5 stars :)

Donut Muffins

Reviewed: Oct. 13, 2010
I made these for a potluck at work. Instead of melting the butter and dipping them, I put them in a large ziplock with the cinnamon and sugar. They were good, but I think they could use some vanilla or something in the batter.

Individual Baked Eggs

Reviewed: Oct. 13, 2010
I scrambled the eggs for mine before adding them to the muffin cups. I made a full, 12-cup muffin pan to reheat for breakfast through the week. These are amazing!

Quick Quiche

Reviewed: Aug. 10, 2010
I made this as a make-ahead breakfast I could reheat quickly and eat before heading off to work. As one reviewer did, I multiplied the ingredients by 1.5 and baked them in a 9 x 13 pan. I also included 1 head fresh broccoli and a red bell pepper to get some more vegetabley goodness in there. Even my 1-year-old who dislikes broccoli will eat this!

Beef Stroganoff II

Reviewed: Jul. 16, 2010
I made this tonight for the first time. I had 1.5 lbs of steak, so I doubled everything except the sour cream and the onion. I used only one onion and 16 oz. of sour cream. Even so, the sour cream flavor was way strong. I think half the sour cream next time and it will be perfect.

Bada Bing Pork Chops

Reviewed: Jun. 24, 2010
I only had time to marinade my pork chops for about 1 hour; they were not extremely flavorful, but I imagine that's partly because I didn't marinade them as long as the recipe called for. Next time I will do the full time.

Amish Breakfast Casserole

Reviewed: Jan. 8, 2010
I really like this recipe. I needed something that I could quickly reheat in the mornings for breakfast before work. This reheats beautifully and is very tasty. I left out the onion and used only cheddar cheese, since I couldn't find shredded Swiss. I also added about half a bag of fresh spinach, torn into pieces, to get some fiber and vitamins. I baked these in a muffin pan for 35 minutes; they were cooked but they didn't hold their shape well. Next time I will probably bake for 40. Definitely going to use this the next time I have overnight guests.

Quick Quiche Cups

Reviewed: Dec. 28, 2009
I tweaked this recipe a little to avoid having leftover ingredients. I couldn't find a 3 ounce package of cream cheese, so I doubled the recipe and used an 8 ounce package and only 1 cup sour cream. I also omitted the red pepper. It turned out pretty well.

Slow Cooker Turkey Breast

Reviewed: Dec. 20, 2009
We love this recipe! It's so easy to make and it's delicious and moist, not dry like roasted turkey can get. For this past Thanskgiving I made 6 of these (2 to a slow cooker) and got rave reviews.

Portobello Mushroom, Fresh Peppers and Goat Cheese Pizza

My friend forced me to try this, because it's not the kind of thing I like to eat at all, but I was surprised at how good it was. I'll be making this to take with me for lunches in the future.
