this was very good and easy to make. instead of the coleslaw dressing, i used fat free honey dijon salad dressing. I also used some chopped pecans in the coconut/bread crumb mixture.

Romantic Chicken with Artichokes and Mushrooms

restaurant quality. added fresh spinach and red bell pepper slices. also thickened with flour and cream. served over angel hair pasta, and balsamic baked asparagus, and for dessert - strawberries and wine over ice cream(both recipes found here). awesome dinner!

Marinated Pork Tenderloin

if i could give this 10 stars i would. i marinated overnight. i used a cab sauv instead of sherry. that was the only change i made. i marinated some portabello mushrooms in the left over marinade and served with pineapple casserole. we absolutely loved the flavor!

Baked Pineapple Casserole

i was a little skeptical about this recipe - but tried it anyway. we loved it. i used 7-grain bread, 1/2 the sugar and 1/2 the butter that the recipe called for. i made it with the marinated pork loin (as suggested) and it was a great combination.

Best Italian Sausage Soup

Just as I expected - it was great. Instead of the pasta the recipe suggested, i used cheese tortellini - very, very good. Also added some sliced portabello mushrooms. Will definitely be making this again.

Hot Artichoke Dip

This dip was awesome. Made this the day after Thanksgiving for a football party - and everyone asked for the recipe. I made in a small crock-pot, added 1/2 cup mozzarella cheese, and instead of pimento's I chopped up a fresh jalapeno - perfect.
