Gourmet Sweet Potato Classic

Very good. I will be making again for Thanksgiving. I loved the brown sugar topping, tastes like a food chain around here.

Alaska Salmon Bake with Pecan Crunch Coating

This was very good, everyone thought I was a natural gourmet. I used Grey Poupon (my boyfriend went shopping as I would have bought something cheaper) and cut down to 2.5 TBS but I think the whole 3 would have been fine. When I first mixed it, I thought the mustard was, too, much and my boyfriend would not like it but it was excellent when it was done. I even used the extra sauce as dip. My salmon was about 1 and a half inch at its thickest point so I baked for 20 minutes and the topping and sides were done but the middle was not hot all the way through so I covered with foil to not over brown the topping and cooked another 6-8 minutes more. It was great. I used one and a half slices of Stroehmann King Bread and put it in the food processor. I will definitely make this again. My boyfriend loves salmon and eats at a number of restaurants and thought this was great. I served with some wilted spinach and white rice.

Sweet Potato Pie I

This was my first pie and everyone said it was excellent. It made enough for a 9-inch pie and 3 mini individual pies. That giant sweet potato took forever to boil so next time I will use 3 little ones. Overall I don't know if it is even possible to improve on this recipe. I was very proud of my pie and have been elected to make some for Thanksgiving.

Easy Spinach Casserole

This was my first time making creamed spinach and this recipe was wonderful. I did cut down the breadcrumbs because it was way too much for such a small casserole dish. I will be making this for years to come. It was also very quick to prepare..I microwaved the cream cheese, stirred, and put it in the oven.

Baked Pineapple II

I love just about anything but this wasn't good at all. It was like a bread pudding thing and it wasn't what I expected. I won't be trying this again. Maybe I did something wrong but I did follow the recipe.

Chocolate Eclair

I tried this with cinnamon graham crackers. It was good but next time I will try honey. A few people thought it was a little rich due to all the frosting so next time I will use less. I do reccomend it and will make it again.

Army SOS Creamed Ground Beef

My husband really liked this one. It is something that I won't make often because you can easily get tired of it. It reminded me a lot of a hamburger helper meal and the hamburger didn't really taste like anything more than burger. I also didn't realize that this was just a meat dish but we ate ours over rice and cornbread. It was much better that way. I will probably try it again in a couple of months.

Anniversary Chicken I

I loved this chicken and so did my husband. I took the suggestion of cutting the terriyaki sauce in half and doubling the ranch dressing. The recipe' doesn't specify how many chicken breats to use so I only used 5 and there was more than enough terriyaki to cover them. This was excellent over rice and I believe mixed chicken pieces would be just as tasty in this recipe'. I will definitely be making this recipe again.

Busy Day Chicken Rice Casserole

This recipe' is great if you want to do something different with your chicken. The meal was quite tasty and my husband loved it so I will definitely be making this often. Next time I will try the suggestion of mixing half of the onion soup in with the other soups then putting the rest on top.
