Blueberry Pie

Okay, in fairness, this pie did taste very good. I increased my berries to 5 c., increased my cornstarch to 4 1/2 Tb., used a dash of lemon juice instead of salt, added some nutmeg and it was STILL runny. I'm going to make it again this weekend with more cornstarch, leaving the rest of the things I did the same and we'll see. At this point, it's hardly my go-to blueberry pie recipe.

Downeast Maine Pumpkin Bread

Okay, so, this recipe was almost identical to two other pumpkin bread recipes I have and since I've really been wanting something different from them I made the following changes: sub vegetable oil for coconut oil, used 2 heaping cups of homemade pumpkin puree, 2 c. granulated sugar/1c. brown sugar & added an additional 1/4 tsp. of ginger. I loved it! The taste was perfect and it is very creamy and moist. I will use this variation from now on.

Tuna Noodle Casserole from Scratch

It was pretty good, but not really worth the time it took to prep for a simple casserole. It's just a casserole, nothing gourmet about it. BUT it is definitely tastier than the casserole that isn't from scratch. I put in lots of garlic, used a peas/carrots combo and three cans of tuna. The boys really liked it.

Spicy Mediterranean Chicken with Sausage-Stuffed Cherry Peppers

The only thing I changed was that I used red roasted peppers (yes, they were huge) because I could not find cherry peppers. It was still very delicious, and like other reviewers said, the flavor popped. I also agree that rice or something to soak up the extra sauce would be good.

Italian Chicken Skillet

Really great for a quick weekday meal. I used a small can of diced tomatoes with chiles and a jar of roasted red peppers (because that is what I had on hand) and the flavor was very good! I think the wine is the ticket.

Aussie Chicken

I omitted the corn syrup because I didn't want the sauce to be too sweet; I also added black pepper (because I put it in everything lol) and I used an onion & herb seasoning in the sauce. My boyfriend was absolutely raving about the chicken and the sauce. It was a definite hit, and even my son didn't notice there were mushrooms on this. The taste was really unique. I also love that this is a quick, weekday meal.

Sweet Corn Bread

Better-Than-Olive Garden® Alfredo Sauce

Really delicious, and agrees with it's title. I used only shredded Parmesan because that was all I had and it was still great. This will definitely be my go-to Alfredo sauce now.

Cola Pork Chops

Delicious. I did some of the things I read in reviews: I seared the chops first after rubbing them with pepper, garlic powder and other herbs. I used honey instead of brown sugar. And thinly sliced an onion over top of the chops before putting the sauce on. Served over rice and it was great!

French Bread

This was the first time I ever made French bread and it came out wonderfully! I combined what other reviewers said and used: 5 c. flour 5 tsp. active dry yeast 2 tsp. salt My boyfriend's exact words were, "this is heavenly" :)
