Strawberry Jam

Reviewed: Jun. 15, 2013
A neighbor gave me a giant bag of very tiny, but extraordinary tasting strawberries. I made this jam with them and it is awesome! I do think that having a candy thermometer helped with knowing when it was fully done. It has just begun to cool in some tupperware containers (it will never make it long enough to bother with canning) and it is already solidifying. The strawberries I had were very tart, so the sugar is the right amount. But if you have very sweet strawberries you might want to cut back a bit! So simple and good!

Chocolate Covered Caramels

Reviewed: Dec. 29, 2009
This isn't a review of this particular recipe but a tip on the chocolate. I recently found an Alton Brown recipe that suggested keeping your melted chocolate on a heating pad (the household, back pain kind!) and it works great! Just keep stirring the chocolate and it keeps it warm and pliable. Happy candy making!

Garlic Top Sirloin Pot Roast

Reviewed: Aug. 30, 2009
Wow! This was just fantastic. I did add some celery and used fresh thyme and rosemary instead of the paprika because I had it on hand. I subbed 1 cup water with the three bullion cubes and then added 3/4 c red wine. I did thicken the broth a bit with some cornstarch. Cooked it on low for about 10 hours because I had to start it early. Now I've shredded what was left and poured the remaining au jus over the shreds so we've got sandwiches one night!

Chewy Granola Bars

Reviewed: Aug. 24, 2009
These are a huge hit in our household! The only change I made to the recipe was to cream the honey and butter together before adding the dry ingredients. I had been looking at other recipes and several recommended this. I also subbed whole wheat flour, but otherwise made them exactly as indicated. Healthy? Maybe not, but better than the store bought kind! Now to try dried apples and cinnamon instead of chocolate chip!

Bacon Ranch Pasta Salad

Reviewed: Mar. 16, 2009
I didn't have a tomato and I didn't want to add the salt from olives so I just chopped up 4 cups of broccoli, carrots and a red pepper and added that. It was really delicious!

Quick Chicken with Asparagus and Provolone

Reviewed: Jan. 4, 2007
We really enjoyed this recipe! I also used fresh asparagus and based on another review, tenderized the chicken with a mallet before dredging and breading. I did make one other sub, which was to use 1/2 the broth and about 1/2 cup of white wine. YUMMY.

Slow Cooker Chicken and Dumplings

Reviewed: Oct. 23, 2006
My husband loved this! Says he'll never have to go back to Cracker Barrel again. LOL Next time I will add some carrots and potatoes, like others have mentioned. I did cut up the chicken into pieces beforehand and use just one tube of biscuits, though. That seemed like plenty. And they're supposed to be doughy, that's why they call them "Sliders!"
