Strawberry Jam
A neighbor gave me a giant bag of very tiny, but extraordinary tasting strawberries. I made this jam with them and it is awesome! I do think that having a candy thermometer helped with knowing when it was fully done. It has just begun to cool in some tupperware containers (it will never make it long enough to bother with canning) and it is already solidifying. The strawberries I had were very tart, so the sugar is the right amount. But if you have very sweet strawberries you might want to cut back a bit! So simple and good!

Chocolate Covered Caramels
This isn't a review of this particular recipe but a tip on the chocolate. I recently found an Alton Brown recipe that suggested keeping your melted chocolate on a heating pad (the household, back pain kind!) and it works great! Just keep stirring the chocolate and it keeps it warm and pliable. Happy candy making!

Garlic Top Sirloin Pot Roast
Wow! This was just fantastic. I did add some celery and used fresh thyme and rosemary instead of the paprika because I had it on hand. I subbed 1 cup water with the three bullion cubes and then added 3/4 c red wine. I did thicken the broth a bit with some cornstarch. Cooked it on low for about 10 hours because I had to start it early. Now I've shredded what was left and poured the remaining au jus over the shreds so we've got sandwiches one night!
