good food soothes the soul...

Super Bowl Sunday...

My husband, and my 15 year old son have been talking all week about what I'm going to cook for Super Bowl Sunday. They pick their favorite appetizers -- LOTS of them!  Here's what they came up with :

Jalapeno Poppers (which I have never made before)
cocktail meatballs
loaded baked potato skins
wonton sausage snacks (completely addicting)
mini cheesecakes with cherry topping

Needless to say, I've been cooking since I got home from church!  The wonton things are MY's the recipe

1 package wonton wrappers
1 lb. tube breakfast sausage
1 can chopped black olives
1 cup ranch dressing
1 1/2 cups shred cheddar cheese

In a 12-cup muffin tin, spray with Pam, and push one wonton wrapper (1/4 size) into each cup of the muffin tin - bake at 425 for 4 minutes (tips of wonton will start to brown)  remove, and repeat until all wontons are cooked and look like little "cups". Set aside.

Brown sausage in skillet, and drain and let cool. Add can of chopped black olives, ranch dressing and shredded cheese.  Mix together and put in a container with lid and refrigerate.

when you're ready to make your appetizer, preheat your oven to 375.  Place 12 "cups" on a cookie sheet, and add a heaping tablespoon of the filling into each one.  Cook for about 6-7 minutes, until filling is bubbly, and cheese is melted.  The wonton cup is chewy, the sausage tangy, and the cheese, sounds weird, I know...but you'll be addicted too!  Let me know what you think!  Happy Super Bowl--- GO RAVENS!!!

I made a batch of broccoli-cheese soup that was horrific, and my boys will never let me forget it! I need to redeem myself one of these any recipes would be greatly appreciated!
