Beer Margaritas

These are the perfect margaritas! Husband was a little leary of them when I told him they had beer in them, but was a believer as soon as he tried it! I used a light mexican beer. Can't wait to make again, and again!

Vietnamese Sandwich

This was so delicious! I marinated the meat in the chili sauce, olive oil, and lime juice. I also marinated the veggies in white wine vinegar and sugar. Can't wait to make again.

Salsa Biscuit Chicken

Yummy and so easy! I added a packet of taco seasoning, some sour cream, and used canned chicken because that's all I had. Served with black beans and guacamole. Husband and 3 kids (5,3,& 1) loved it!

Acapulco Chicken

We loved this! It was yummy and easy! I added a can of black beans to it and served Mexican rice on the side. We put sour cream and cheese on it and made soft tacos. My husband said he could eat it once a week.

Szechwan Shrimp

This was awesome!! My husband said it was as good as our favorite Chinese/Vietnamese restraunt. I doubled the sauce and served it over Jasmine rice. We had the Spicy and Sweet Green Beans(from this website) as a side. Will be making again very soon.

Slow-Cooked Tamale Casserole

Very yummy flavor! I took others advice and used taco seasoning instead of chili. I didn't have to time to put in slow cooker so I baked it at 350 for 45 minutes and then added the cheese and cooked 10 more minutes. Served over fritos with sour cream on top.
