About this Cook
LOVE to cook and try new things. I have been cooking since I was a little kid in the kitchen with Mom! I love trying to make food/recipes healthier.
My favorite things to cook
Just about anything, except pie. Don't like pie and try to avoid to bake it! :) Mexican, Pasta/Italian and dessert!
My favorite family cooking traditions
Always have homemade egg noodles on Thanksgiving. We do the family thing at x-mas the week leading up to x-mas, so on x-mas day, my husband, 2 boys & I stay home and I fix something non-traditional! Enchiladas, pot roast, crab cakes, chicken pot pie, roasted pork, etc....
My cooking triumphs
That friends & family ALWAYS have many requests of me for any get-togethers!
My cooking tragedies
Oh there have been many over the years.....practice, practice, practice...it always makes perfect! I never give up!

Mini Tacos
these were all gone! I modified a bit, based on reviews and my own personal opinion. I completely baked the wontons and 1/2 way thru cooking, I flipped to brown underside. Then I assembled filling ingredients inside. I topped with sour cream and diced tomatoes. I dont use PACE, too salty. Used reduced sodium taco seas and did not even add the salsa, until the end (I doled a little on top of meat & cheese, but under sr crm. Because of precooking before adding ingredients, I had no probs with soggy bottoms (this could be because I didnt add watery salsa before cooking wontons either) and no probs with them sticking in muffin pan.

Raspberry Chocolate Supremes
some helpful hints: I microwave chips on high for 15 sec intervals, instead of on stove. after you put your fruit filling on crust, freeze for 15 mins, and you can then spread cream cheese filling instead of dropping by teaspoonfuls. Freeze again for 15 mins and the choc layer spreads easily too. I used frzn cherries, 1/8 c lemon juice and 2 tbs tapioca and cooked on stovetill thick. I just prefer fresh berries over jam. Was good recipe and will def make again, using other berries too.

Slow Cooker Mashed Potatoes
I used milk instead of reserved water to reach desired consistency and chive cream cheese (all I had on hand) and I really liked the added flavor the crm chs gave it. I used fresh roasted garlic too! I did not find this to be more work than normal mashed potatoes. Not sure why others did?!?!
