Chicken and Spinach Alfredo Lasagna

Thank you! My entire family had seconds! I only made a couple of modifications...I used a rotisserie chicken, omitted the mushrooms (bleck) and used one can each of cream of chicken and celery. I replaced ricotta cheese with cottage cheese. The sauce [itself] is great for other Alfredo recipes.

Creamy Tomato Bisque

This is a good "thick" soup. I did not have anise liqueur or half-n-half, so I used 1% milk. I think next time I might add a cup of V8 juice or vegetable broth to make it more soup-like not sauce like.

Garbanzo Bean Chocolate Cake (Gluten Free!)

I made this cake for Easter. The cake was edible with sliced strawberries and whipped cream, but alone it was hard to get passed the rich grainy mousse/very moist brownie texture. My family and guests said it was lacking the chocolate flavor and have kindly asked me not to make this again.

Breakfast Casserole III

YUM! I love breakfast foods. I made 2 changes...used crumbled bacon inplace of sausage, O-Brien potatoes inplace of regular spuds and omitted the butter.

Sparkling Punch

I have made this punch for several occasions and it is a HUGE hit. Instead of carbonated water, I like to use 1 liter of key lime sparkling water. This recipe is light and refreshing.

Balsamic Chicken and Pasta

I really enjoyed the lightness and overall flavor of this dish, but the balasmic seemed a bit too sweet. I marinated over night, I might try a couple hours next time and see if that cuts down on the sweetness. I cut my olive oil in 1/2 in the marinade and sauce. I also used Italian stewed tomatoes in place of cherry tomatoes (what was in teh pantry).

Cornbread Muffins I

These were fabulous! We ate the entire pan and skipped dinner. My only change, we used a can of creamed corn instead of frozen corn. I will definitely make these again and again and again.

Beer Steak

The Best Rolled Sugar Cookies

Soft & tender cookies. I followed the recipe and added 1 tspn nutmeg. I also used the tip of rolling the cookie dough in powdered sugar instead of flour. FANTASTIC TIP! I think I preferred eating the cookies plain they were that good.

Too Much Chocolate Cake

Moist moist cake! I substituted applesauce for oil. We found that the cake was 10x better on day 2. It grew in flavor and moistness. YUM!

Braided Egg Bread

This was heavenly. I took the advice of others to add an extra egg + yolk and increase the sugar to 1/3 cup. We ate it with homemade Toscana soup. It was so cozy.

Pita Pizza

I omit the olive oil and place the pitas on a cookie sheet. Pop in the oven at 400* for about 10 minutes to crisp them "crust" up. We have a pizza bar full of toppings and everyone makes there own. Place them back in the oven for another 10 minutes. VIOLA! Personal pizzas.
