These are a perfect dinner roll. I prefer a slightly sweeter roll but my guests just loved them.

Pink Lemonade Pie

Reviewed: Aug. 13, 2008
Tasty and refreshing! Used 8 oz. of softened cream cheese and 1/3 cup sugar in place of the sweetened condensed milk. Also used 10 oz. of thawed pink lemonade concentrate and added four drops of red food coloring. Froze. Mmmmm.

Iced Pumpkin Cookies

Reviewed: Sep. 18, 2008
These are soft but I didn't have a problem with the texture. I made a few changes; bumped up the nutmeg and cloves to 1 tsp., used 1 c. white sugar and 1 c. light brown sugar, and used slightly over a teaspoon of vanilla. These are definitely better the next day, so if you have the time, figure that into the recipe.

Made as written, except added 1/2 tsp. garlic powder. I was skeptical, never having eaten squash in my entire life. It was very good!!

Shepherd's Pie VI

Reviewed: Nov. 25, 2008
I used 8-10 ounces canned peas/carrots instead of the chopped carrots, and added 3 cloves of chopped garlic. To the meat, I added 1/4 cup worchestershire sauce. Finally, I seasoned it with pepper, seasoning salt, garlic powder, and onion powder. Also, I used all the cheese on the top.

London Broil I

Reviewed: Feb. 1, 2011
I used 1/4 c soy sauce and 1/4 c worchestershire sauce. Added 2 T balsamic vinegar. Added more garlic, and 1/4 t pepper. I marinated about 5 hours (would have done more but ran out of time). I flipped every hour. I broiled. Excellent. My roommates loved it, too... and ate all of it before I got any leftovers.

Four Cheese Macaroni

Reviewed: Feb. 1, 2011
This is very dense, like a casserole, but is delicious! I double the cheeses and use 1 egg, up half and half to 2 cups, use 8oz Muenster, 1 t. paprika, 1 1/2 t. onion powder.

Guinness® Corned Beef

Reviewed: Feb. 1, 2011
Wonderful! I made some changes. I trimmed all fat off of meat. Rub with part of the 1 c. brown sugar. Place in crock pot. Mix rest of brown sugar with spice packet and 1-2 cans Guiness. Pour over roast. Set on low 4 hours. When timer goes off, turn roast and cook for another 2-4+ hours. Throw in cabbage with 1 1/2 hour to go. Make carrots, potatoes, and onion separately. Serve with Irish soda bread from this site.

Homemade Black Bean Veggie Burgers

Reviewed: Jul. 13, 2011
These were great! I'm not vegetarian but I'm trying to eat less meat for cost reasons. I liked these way more than regular burgers (I don't especially like red meat). The only thing I did was after running the veggies through my food processor, I spread the mixture on a cutting board and blotted it with paper towels to remove some of the water. Next time will make a double batch a freeze for a quick dinner later on!
