Easy Vegetable Pot Pie

Spinach Casserole

Use 3 (10oz) pkgs. of frozen spinach. Replace velveeta with Muenster, layer spinach with phyllo dough several times (kind of like lasagne), use only a few tablespoons of butter to brush the phyllo dough with lightly, chop some 1 onion and 3 cloves garlic to add to the spinach. Omit garlic powder.

French Leek Pie

Fried 3 strips of bacon, set aside. Cooked leeks in bacon fat/butter and added crumbled bacon to cheese mixture. Added minced garlic to leeks a few minutes before finished sauteing.

Angel Food Cake III

My first attempt at making an angel food cake - wonderful! I used a 2 piece angel food pan, and cooled it upside down on a bottle. Super! Served with whipped cream and fresh strawberries and blueberries.

Guinness® Corned Beef

Wonderful! I made some changes. I trimmed all fat off of meat. Rub with part of the 1 c. brown sugar. Place in crock pot. Mix rest of brown sugar with spice packet and 1-2 cans Guiness. Pour over roast. Set on low 4 hours. When timer goes off, turn roast and cook for another 2-4+ hours. Throw in cabbage with 1 1/2 hour to go. Make carrots, potatoes, and onion separately. Serve with Irish soda bread from this site.

Pink Lemonade Pie

Tasty and refreshing! Used 8 oz. of softened cream cheese and 1/3 cup sugar in place of the sweetened condensed milk. Also used 10 oz. of thawed pink lemonade concentrate and added four drops of red food coloring. Froze. Mmmmm.

Chili Potato Burritos

I diced my potatoes but did not mash (they were pretty mashed after stirring anyway). Added a regular can of mexi-corn and a regular can of black beans in addition to a whole diced onion. Upped cheese to 1 c. in filling and 1/4 c. on top. Added a bit of sour cream to potatoes - started with 2 T and kept adding until the mixture didn't seem so dry. Added a packet of taco seasoning to potatoes (start with 3/4 and go from there). Didn't use much enchilada sauce but topped mainly with green salsa verde taco sauce. Yum! Filling! One was enough for me with some Spanish Rice! I filled 8 tortillas but still have enough filling for at least 4 more - we'll be eating this for lunches, too. Great for the budget and the stomach!

Homemade Black Bean Veggie Burgers

These were great! I'm not vegetarian but I'm trying to eat less meat for cost reasons. I liked these way more than regular burgers (I don't especially like red meat). The only thing I did was after running the veggies through my food processor, I spread the mixture on a cutting board and blotted it with paper towels to remove some of the water. Next time will make a double batch a freeze for a quick dinner later on!

Greek Chicken Pasta

I followed the recipe exactly and it seemed very bland to me - I know kalamata olives would have enhanced the flavor, but even they wouldn't have fixed it. Not worth the amount of prep it took :-(

Black Bean and Corn Quesadillas

Microwave tortillas in damp paper towels rather than putting them in the oven. Up cream cheese to 5 oz. Add 1 regular-size can corn to bean mixture. Omit jalapeno peppers. These were sooooo good!

I used 1 1/2 tsp chili powder, halved the black pepper, doubled the vinegar, and use red and yellow peppers rather than green peppers. I really liked this but my sister didn't. Worth a try, though, definitely.
