Grandma's Sloppy Joes

This is my favorite sloppy joe recipe if I leave out the cloves. Flavor's too strong, even if I cut the amount in half.

Frozen Strawberry Margarita

We first made these margaritas for our 4th of July cookout last year. This is the first thing that EVERYONE requested for this year's cookout. They are so fresh teasting and are the best strawberry margaritas I have every had. Be careful though; they go down sooo easy and before you know it, you're feeling extremelygood!!!! You really don't need 6 cups of ice, but I wouldn't change anything else!

Low-Fat Blueberry Bran Muffins

I made a couple substitutions for health reasons and they still turned out fantastic! I didn't have wheat bran so I used wheat germ. I don't do dairy, so I substituted soy milk for the nonfat milk. I used Splenda brown sugar for the regular brown sugar and used 1/4 cup Eggbeaters egg substitute for the egg. They are so moist and juicy when you bite into them, and I can eat them without any guilt! When I tell people to try my non-fat, non-dairy, no sugar muffins, they say yuck, but end up loving them! They are my daily morning snack.

Dan's Favorite Chicken Sandwich

As someone who needs to watch my fat/cholestrol intake, I make a few changes. I substitute turkey bacon for the regular bacon, use fat free ranch dressing, and use low fat Lorraine swiss cheese. The avocado also helps with "good" cholestrol. I also substitute whole grain bread. Still delicious and healthy!!

Lime Chicken Soft Tacos

This is a quick, delicious recipe. The only changes I made was to use a whole lime instead of a half because I really wanted to taste the lime, I used more than two green onions, and I cut the pepper to a half teaspoon because I didn't want it too spicy. Don't skimp on the red wine vinegar - it gives it a fantastic flavor. And for the toppings, I added diced avocado and sour cream. My son and I ate every bite of this recipe and I'm looking forward to making it again soon!

Spicy Orange Beef

This is a great recipe. The only modifications I made were that I used sirloin steak instead of round steak (which I like better in a stir fry) and instead of the sherry ( I didn't have any) I used a 1/4 cup of orange juice. The next time I make this I'll add some vegetables, like peapods or broccoli, but just the meat and sauce by itself is really good. You would think with the orange zest, marmalade and orange juice I added, the citrus flavor might be too strong, but it was just right! My son raved about it! This is a keeper.

Marinated Baked Pork Chops

My family raved about these pork chops and it's all about the sauce! I definitely will double the sauce recipe, since the amount was not enough for six boneless chops, plus we wanted extra for dipping! Next time I will put the pork chops on a drip pan and not a baking pan. As the pork chops baked, they sat in a lot of drippings and the the sauce started getting watery. I put the done chops on a different pan and put them under the broiler for a couple of minutes so the remaining sauce would get slightly carmelized. SO GOOD!

Almond Chicken Salad

This salad is excellent! The dressing has zing to it - just the way I like it. I did not have chicken on hand so I used cutup turkey instead. Also used honey roasted sliced almonds instead of regular. Next time I may add water chestnut slices and some chow mein noodles. This may become a lunchtime staple!

Beefy Baked Ravioli

My picky family loved this recipe! I did add a couple shakes of garlic powder and oregano to the sauce for a more Italian flavor. It's a quick after-work meal that's delicious and filling. Will be making it again soon!

Slow Cooker Chicken Taco Soup

This recipe was so easy and so delicious! I tend to like more creamy soups, so before I added the shredded chicken, I put about three-fourths of the soup in the blender and pureed it. then I put it back into the crockpot with the chicken. My son loved it that way. Added some shredded Mexican cheese, tortilla strips and sour cream. Awesome! Better than the soup at our nearby Mexican restaurant.
